Focaccia with sun-dried tomatoes

Ingredients

Dough:
dry yeast 0.75 tsp
wheat flour c. from 250 g
sparkling mineral water 145 g
olive oil 30 g
salt 0.5 tsp
sugar 0.5 tbsp. l
Additionally:
olive oil 2 tbsp. l
sun-dried tomatoes some
coarse salt taste
italian herbs taste

Cooking method

  • Mix yeast with flour, add mineral water, oil, salt and sugar. Knead a soft, sticky dough. Fermentation in the refrigerator - 12 hours.
  • Allow the dough to warm at room temperature for about an hour before cooking.
  • Knead the dough, roll it out on baking paper in a circle with a diameter of 30-35 cm. Proofing under foil for 60-90 minutes.
  • Preheat the oven together with a baking sheet to 230C (convection 210C) degrees.
  • Before planting in the oven, make indentations with your fingers on the surface of the focaccia. Drizzle with olive oil, sprinkle with herbs and coarse salt.
  • Transfer the focaccia to a baking sheet (with the paper). Bake for the first 7 minutes with steam at 230C (convection 210C) degrees, then drop the temperature to 200C (convection 180C) degrees until golden brown.
  • Serve immediately, hot. Bon Appetit!

  • When kneading, you can add 1 teaspoon of dry garlic to the dough (do not add Italian herbs later) and use oil from sun-dried tomatoes for the top of the focaccia.
