Flourless coconut cookies

Ingredients

Egg white 4 things
Sugar 200 g
Vinegar 1 tbsp. l.
Vanilla sugar 1 tsp
Coconut flakes 250 g

Cooking method

  • Mine is one of my favorites. These are cookies without FLOUR!
  • Actually, it's a Jewish recipe, quick and easy. Coconut beads are light and crunchy. I always have fried on top, and white inside. And I want whites completely. But my stove is just crazy!
  • But it doesn't affect the taste!
  • Whisk the whites with vinegar and gradually add sugar. We continue to beat until the sugar dissolves, at the end add the coconut flakes and vanilla sugar. Set aside from a pastry bag in the form of pyramids and bake at 150 degrees for 40 minutes.

Note

I use apple cider vinegar, I haven't tried it with the usual one.

But if your protein has already settled, it is better to do it by hand, do not pour out the coconut chips all at once. Take in portions and knead with movements from top to bottom and clockwise to maximize the oxygen in the protein. In my opinion, the falling off of the protein is either you did not whip it to the end, or you did not thoroughly separate the protein from the yolk, and also try to rinse the dishes and whisk beaters with water and citric acid or lemon juice. Beat the protein with sugar for about 10-13 minutes, until persistent peaks, just dense ones. Try it!
