Ingredients

flour (better than 1 grade) 500g
beer 150ml
warm water 130ml
sugar 2 tbsp. l.
salt 2 tsp
yeast dry 2 tsp or 20g fresh
butter 20-30g.
coarse salt, sesame
ready-made mustard (option) 2 tbsp. l.

Cooking method

  • Pretzel is a traditional German pretzel in the shape of the so-called "love knot". Mild, with a special taste, German pretzels are best suited as a beer snack, as well as an accompaniment to traditional German dishes: white sausages, stewed cabbage, liver pate and various soups. This is an exceptionally tasty thing that both adults and children like.
  • Knead all ingredients into dough. I have my own fresh, unpasteurized, unfiltered, "live" beer. So the pretzels fit very well. And I did it with mustard. I do it in HP on the Pizza program. If you are using fresh yeast, first dilute it in warm water, and after 20-30 minutes add the rest of the ingredients. Divide the dough into 20 pieces. Leave to come under the film for 15-20 minutes. Roll a sausage about 40 cm long from each part. Shape each sausage into a pretzel shape (see photo). Leave the pretzels to rest for 20 minutes at room temperature. In a wide saucepan or saucepan, boil a quart of water and add 2 tablespoons of baking soda to it. Using a slotted spoon, immerse the pretzels in boiling water and hold there for 30 seconds. Remove the pretzels and let them drain on a wire rack or towel. Cover them with beaten egg, sprinkle with coarse salt and sesame seeds (caraway seeds). Place the pretzels on a cold baking sheet, place in the ovens and set the temperature to 200 degrees. Bake the food for about 20 minutes, until it has a characteristic golden color. I baked in the Princess pizza maker for about 22-23 minutes from a cold state.
