Ingredients

feta cheese, feta or cottage cheese 200 g
softened butter from 50g to 100g
paprika 2 tsp
dry mustard 1 tsp
ground coriander 1.5 tsp.
grated onion 3 tbsp. l
capers 2 tbsp. l
pickled cucumbers, anchovies optional
greens, green onions, bell peppers for decoration optional

Cooking method

  • Liptovsky cheese (Liptau cheese, Slovak Liptovský syr, German Liptauer) is a traditional dish in Slovakia and Austria. The name of the cheese was given by the Liptov region, where the dish originates. Liptovsky cheese is a mixture of feta cheese with butter, red bell pepper, black pepper and other spices. Liptovsky cheese is spread on bread. Interestingly, in Slovakia, Liptov cheese is more of a regional dish, while in Austria it is widespread.
  • Cheese or cottage cheese, put on a sieve - let the whey drain, and mix with softened butter and the rest of the ingredients, stirring until a homogeneous cream. Pre-grind capers, herbs and cucumbers.
  • We put the cheese in a mold and send it to the refrigerator for 30 minutes.
  • There are several varieties of cheese. Here are the main ones.

  • Later "urban" recipes came to include capers, mustard, anchovies or anchovy paste, and diced pickles.
  • In Austria, it is customary to decorate Liptov cheese with finely chopped green onions or green bell pepper rings. This mixture is spread on bread or used as a dip.

  • Some older recipes also mention bitter beer added to improve the consistency of the dish. According to Jord Lang's cookbook "Hungarian Cuisine", sandwiches with Liptov cheese, when served among the highest nobility of Hungary and restaurants of the Austrian monarchy, were decorated with black caviar.

Feta is also delicious. I love her with pickles, spices and herbs. But you can't add a lot of cucumbers to it - there is already salt in it.
