potatoes 800 gr.
smoked lard or bacon 75 gr.
bulb onions 1 PC.
toast or white bread a couple of slices
butter 50 gr.
eggs 2 pcs.
flour 150 gr.
nutmeg, salt, pepper taste
breading starch 2-3 st. spoons

Cooking method

  • Unexpectedly, I discovered such a dish as dumplings. Well, that is, I knew him before, but only in the form of pieces of dough in soup. It turned out that each region of Germany has its own recipe for dumplings, mainly differing in cooking technology. I will try to post them over time. Let's start with Saxon dumplings with fried bacon, dear to my heart.
  • 1. Wash the potatoes, boil in a peel, cool slightly, peel and mash. (I rubbed it on a fine grater, because I hesitated and the potatoes cooled pretty much).
  • 2. Cut the lard into cubes, chop the onion. Cut the bread into cubes like lard.
  • 3. Melt the lard in a frying pan, add the onion, rub with a pinch of sugar on top and bring the onion until golden brown. Fry the bread in another frying pan in butter.
  • 4. Mix all the ingredients (except the starch), leaving a spoonful of lard and onion for serving. Let the dough stand for 20 minutes.
  • 5. Form round dumplings with wet hands, breaded in starch and simmer over low heat for about 15 minutes. Pull out with a slotted spoon. Caution! They are gentle!
  • 6. Serve with vegetables or meat. BUT! I did just that for the photo with tomatoes (the meat was already cooked). But here's the second portion ... My soul just screamed that the Germans, of course, can demand anything, but homemade sour cream and dill are just asking for this dish. Taki YES! Requests!

Honestly, I was skeptical about the recipe. A similar composition of me more to our potato zrazami somehow inclined. And then boiled ... I slipped it to my husband for tasting. Shouts - Give esche! I tried it myself - delicious. The taste is somewhere between dumplings with potatoes and ..... potato pancakes. I think that I will cook more than once.

I dipped the only first dumplings into boiling water and they fell apart, then I reduced the power. Served with margelan radish sprinkled with sesame seeds.

I'm glad the recipe came in handy. You really need to cook any dumplings on very low heat. And with a salad of radish, it probably goes well. The radish is spicy, well set off the potatoes.
