Hamburg-style pork (one of the options)

Ingredients

pork (shoulder or loin) 600 g
onion 1 PC
carrot 1 PC.
leek 30 gr.
parsley root 30 gr.
flour 1 tbsp. the spoon
smoked sausage 2 pcs.
vegetable oil for frying 2 tbsp. spoons
salt, parsley, pepper, cumin, sugar, bay leaf taste
broth or water 0.5 cups

Cooking method

  • This recipe caught my eye in the Big Cookbook. However, after searching the Internet, I found another recipe with the same name, but with absolutely different ingredients. Therefore, I am writing that this is one of the possible options. So:
  • 1. Cut vegetables and onions into thin slices in butter. The recipe indicated "60 grams of different vegetables" it seemed to me that such an amount is clearly not enough, and since the list of vegetables was not indicated, I put what was at hand.
  • 2. Divide the meat into two pieces, make a slot in each with a narrow knife and stuff the sausage into the meat. Place the incision with a skewer. This is how it will turn out:

  • The book indicates that there is an option when the meat is not stuffed with a sausage, and the sausage is crumbled into a sauce. But it seemed to me that it would be more beautiful.
  • 3. Salt and pepper the meat, send it to the vegetables and simmer under the lid until tender. I entrusted this to my SKV Polaris 0205.
  • 4. Take out the meat and cover with something so that it does not get cold and weather. Bring the gravy that has accumulated under the meat to a boil, pour the flour loose in broth or water into it. The sauce thickens. Add caraway seeds, salt, sugar, chopped parsley and let it boil a little.
  • 5. Strain the sauce and lightly rub the vegetable grounds through a sieve. It turns out a pretty thick sauce with a very rich taste.
  • 6. Nicely chop the meat, garnish with any potato or flour or cereal products. You can put peas, salad, etc. Serve the sauce separately.
  • Cook for health, it's delicious!

Note

I like it. The meat is nice. Smoked sausage gives such an interesting note. The sauce tastes best for me.
