Melon honey

Ingredients

Melon (net weight) 1 kg
Sugar (depending on the sweetness of the melon) 300-500 g
Lemon juice 1 st. l.
or
Lemon acid on the tip of a knife

Cooking method

  • Cut the melon into cubes, cover with sugar and leave until the juice comes out.
  • Bring to a boil, turn off, cover and leave to cool completely.
  • Then bring to a boil, reduce the heat to a minimum and cook for 1 hour (40 minutes under the lid, 20 minutes without).
  • At the end of cooking, add lemon juice or citric acid.
  • Pour into sterilized jars, roll up, turn over and leave to cool.
  • The first time I cooked it to dispose of a melon that was not tasty, but it turned out so tasty that next time I specially bought a melon for jam.)
