Ingredients

For dough:
150 g rye flour +150 ml warm water + 2 tsp. dry yeast
For the test:
Dough all
500 g wheat flour
2 tbsp. l. warm milk
320-350 ml warm water
4 tbsp. l. olive oil
1h l. sea ​​salt
1 tsp Sahara

Cooking method

  • A revised recipe based on the basic pizza dough from the book "Let's Eat at Home" by Yu. Vysotskaya.
  • With all due respect and even love for Julia's recipes (thanks a lot to her for her books, programs and love for cooking), the dough did not work strictly according to the recipe. I had to interfere with the recipe, and now I even use it for baking bread or for rustic pies.
  • 1. Mix all the ingredients for the dough and leave to rise for 30 minutes in a warm place.
  • 2. Mix the dough, wheat flour, water and milk at low speed in a kneader or food processor and let stand for 10 minutes.
  • 3. Start kneading the dough at a low speed, gradually introducing in small doses salt, sugar, olive oil.
  • 4. Form the dough greased in rast. oil with your hands in a lump and allow to come up for 2 hours.
  • 5. Part of the dough can be stored in the refrigerator, the rest can be used to bake a pie, bread or pizza.
  • 6. The dough keeps well in the refrigerator for several days.
  • 7. The addition of a couple of Art. l. fresh active wheat sourdough during kneading.
  • A good pie turns out on this dough - it will appeal to those who like simple country pies with juicy chicken filling.

Crochet, the first time I spilled water according to the recipe, I had to add a lot of wheat flour. After all, there was dough for rolling in the reuept! Yeast, then I immediately reduced and added a spoonful of leaven. And this option with the addition of white flour is just in the photo, and I liked it!
When I reduced the water, maturing the amount and proportions of rye and millet. flour, it seemed that there was too much rye for pizza.
So now I will either increase the white flour or just arbitrarily decrease the rye dough, for example, 100 rye + 100 water, and the rest is according to my scenario.
