German Lunch (3): Rote Grutze (Red Porridge)

Ingredients

Red berries (cherries, raspberries, strawberries, etc.) 700 g
Cherry and red currant juice 2 tbsp.
Sugar from 2 st. l.
Corn starch 2-3 st. l.
Cherry vodka, cherry liqueur or white rum. 0.5-1 tbsp. or at will

Cooking method

  • I suggest that you please your guests with a themed lunch consisting of German cuisine. Such a happy thought came to my mind when I decided to participate in the Steba competition "Dishes of German cuisine".
  • For myself, I decided that lunch should be light, as balanced as possible, consist of three dishes, some of which can be prepared the day before. And most importantly, it is advisable to offer guests several delicious desserts to choose from: Rote Grutze (Red porridge) and gentle Bavarian cream with Rote Grutze!
  • Also, taking into account the German frugality, I wanted to choose such recipes so that all the ingredients were available for them, and after cooking there were no leftovers.
  • We have already prepared the first dish. It was German apple soup - Apfelsuppe... I plan to serve this soup cold or slightly warm, so it can be cooked beforehand.
  • For the second, Swabian dumplings are waiting in the freezer "Herrgottsbeschei erle" (rough translation: "deceive God"). This is the name of the well-known "Maultaschen" ("Multaschen") in the Swabian dialect.
  • Now let's prepare the first of our planned desserts.
  • Rote Grütze is a very common dessert in Germany. And not only in Germany, but throughout Europe. For some time now, this dessert has also been found here. This phrase is translated as red porridge. In fact, this, of course, is not porridge, but a real thick jelly made from juice and from fresh or frozen berries that have not been subjected to heat treatment.
  • The presence of the word "grütze-porridge" in the name, apparently, is explained by the fact that in ancient times, this jelly was prepared with the addition of semolina or sago.
  • The dessert is so versatile that it can be prepared all year round with fresh and frozen fruits and berries. You can add any proportion of wine and strong sweet alcohol to the juice, or you can not use alcohol at all.
  • The taste should be checked during the preparation process, as all fruits and juices are different and the taste of the dessert must be balanced by adding or reducing the amount of sugar.
  • This dessert can be made from berries, fruits and light juice, either with the addition of white wine or rum, or without them. And then it will be Grüne Grütze or Gelbe Grütze.
  • For everyday use, it is recommended to serve this dessert with whipped cream, whipped sour cream and sugar.
  • For a special occasion, I advise you to prepare butter cream for dessert.
  • This will turn a banal, but delicious, jelly into an exquisite dessert.
  • I made Rote Grütze with red berries and fruits, white rum and garnished with whipped cream.
  • Rote Grutze (Red porridge)

  • Sort the berries (cherries, raspberries, blueberries, blackberries, etc.), rinse and discard in a colander or remove from the freezer.

  • Bring the juice to a boil over medium heat and pour the starch mixed with a small amount of cold juice into the boiling juice, stirring constantly so that there are no lumps.

  • - Stir the jelly constantly until it becomes transparent. After that, dip the berries and fruits in the jelly, bring to a boil, remove from heat and add alcohol.

  • - Pour into beautiful glasses and, if you are going to store dessert in the refrigerator, be sure to cover with something on top.

Note

For children, you can do without alcohol.
We prepared the first, second course and dessert, but we still have some ingredients. The zealous German hostess should definitely attach them!

It will turn out great, and if you also decorate with Bavarian cream without gelatin, then in general ....: nyam: Only for sugar you need to try so that the jelly is sweet!

Trendy, prepare this dessert, since you love jelly, you will like it, by the way, the alcoholic taste is almost not felt, but the aroma remains! Watch out for sugar if the juice is sour. Thank you and your daughter for your attention !! :)
