Herring salad with beets (Heringsalat mit Roten Rueben)

Ingredients

Celery root 200gr
Herring 120gr
Potatoes 250gr
Pickled cucumbers 150gr
Apple green 1 PC
Beet 2 pcs
Bulb onions 1-2pcs
Sour cream, mayonnaise, mustard
Salt, pepper, sugar
Apple vinegar

Cooking method

  • Boil and peel the beets and potatoes. Peel the celery, cut into strips, boil in salted water for 5-7 minutes. Cut the onion into half rings, scald with boiling water and, if desired, marinate for 15-20 minutes in apple cider vinegar.
  • Cut potatoes, beets, cucumbers into strips. Peel and coarsely grate the apple. Add celery and onion and stir.
  • Prepare a sauce of mayonnaise and sour cream (mine is 50/50), add mustard, salt, pepper and sugar to taste, season the salad.
  • Put salad on a plate, put pieces of herring next to it, garnish with herbs.
