Wheat bread with fenugreek on dry hop sourdough.

Ingredients

For dough: 100% hop millet. leaven 40 g
Warm water 90 g
Wheat flour c. from 120 g
For the dough: Wheat flour c. from 320 g
Wheat bran 30 g
Powdered milk 1 tbsp. l from x / n
Ground fenugreek 1 tsp from x / n
Himalayan red salt (or other) 2/3 tsp from x / n
Warm water 220 g
Ghee butter or ghee 15 g

Cooking method

  • First, I prepare the dough starter. To do this, I take 10 grams of dry hop sourdough. I add 15 grams of water and wheat flour. Stir and leave until the starter is ready. It will increase in volume by 3 times. You can do this at night.
  • When the starter is ready, I make a dough. I mix warm water with a ready-made starter, stir with a mixer or a jar, add flour and continue to knead until smooth. I leave the dough to mature until its volume increases by 3 times or more.
  • When the dough is ready, I make the dough. I sift the flour, add all the dry ingredients to it, mix and send it to the bread machine. I mix all the dough with water, knead with a mixer and pour it into a bucket of bread makers on top of the flour.
  • "Pizza" mode. When the bun is formed, towards the end of the batch, I add ghee butter. After completing the kneading with the bread maker, turn off and turn on the \ "FRENCH \" mode.
  • Then I go about my business and wait for the signal to end the work of the bread machine.
  • I take the bread out of the bucket onto the wire rack, brush it with Guy butter and send it to the cold oven until it cools.

It turns out very tasty bread. Light, croissant crust, nutty fenugreek smell.
