  • Birnbrot was originally a bread variant of poor people living off cattle in the Alps. But with its satiety and taste, it has not only survived to this day, but has also become a traditional baked goods during Advent and Christmas.

  • When the dough comes up, put half in a bowl of fruit and set aside the other half.
  • Knead the dough with fruits and nuts well (it is very difficult to stir, you need to make an effort). Let the mass rest for 30 minutes.
  • From this mass, you can make two large, or 4 small loaves.
  • We form rollers from the filling, put it on a thinly rolled dough, and wrap the filling with dough.
  • We transfer the bread to a baking sheet covered with paper, seam down. Press lightly with your hands and form an oval.
  • Cover the top with yolk and cream and bake at 180 g for 55-60 minutes.
