Cooking method

  • Kava (seven-ingredient coffee drink)
  • I got this recipe from my grandmother. She prepares it every summer and treats her neighbors, grandmothers, girlfriends to it. From her lips, this recipe sounded like this: dry everything, grind in a mill, brew with milk.
  • My grandmother, by the way, is already a little over 80, but she still picks mushrooms and berries herself, five kilometers on foot in any weather (she will also refuse if someone stops for a ride) and for her whole life there are pills from the pharmacy - no, no! All on herbs and wild plants.
  • First you need to collect and prepare all the components. This is probably the hardest part.
  • Kava (seven-ingredient coffee drink)
  • Chicory root, dandelion root.
  • The preparation of the roots of these plants is similar, so I will combine them together.
  • The roots of chicory and dandelion are dug up in late autumn, when the entire aerial part has already faded, less often in early spring during the period of regrowth of rosette leaves. It is better to do this after rain, then the roots come out of the ground more easily and are less damaged.
  • After digging, the roots are thoroughly washed and cleaned from the ground with a stiff brush or knife, so that they become white (or almost white, brownish). Next, we dry the roots in any available way (in a dryer, oven, on the stove). I dried on the stove. The optimum temperature for drying roots and rhizomes is considered to be 40-60C. To speed up the process, they need to be cut into rings. Dried roots of chicory and dandelion are white inside, brownish outside. Dandelion roots are slightly darker.
  • By the way: The moon comes and goes, along with it the waters of the oceans and seas of the Earth move, which leads to the ebb and flow. Likewise, the influence of the Moon is manifested in both the animal and plant world. When the Moon arrives, all the vital energy of plants rushes upward - into their flowers, fruits, leaves, stems. The moon is waning, - the energy moves down to the root system.
  • Acorns.
  • Dark brown acorns are harvested from mid-August to October. After collecting, we discard those damaged by pests, wash, peel them and cut out minor internal damage, if any. We cut the fruits into several parts and dry them. I also dried the acorns on the stove.
  • By the way: Oak has always been considered a magic tree - because of its power, strength, fertility and longevity. It is not surprising that some of its parts are respected. Since antiquity, amulets have been made from oak bark, as well as from its leaves and fruits, used to give strength, prolong youth, and protect from infertility.
  • It is also believed that oak enhances intellectual ability. So, you can maintain brain activity and excellent concentration for a long time by constantly carrying oak bark with you.
  • An oak fruit, an acorn, was worn as a talisman against drunkenness. In ancient Rome, the acorn was believed to help with aging, and wheat bread with crushed acorns was popular with the elderly there. The acorn amulet is credited with the properties of helping in achieving goals, attracting good luck, and also ensuring youth and longevity.
  • Acorns are hung on windows as a protective amulet against evil forces.
  • Well, if in a dream you see an oak tree hung with acorns, expect the nearest prosperity and career growth.
  • Rye, wheat, barley, oats.
  • Sift ripe cereals, if they contain impurities, rinse and dry. I already got dry cereals, but with significant impurities, so I carefully sorted them out, washed and dried everything on the same stove.
  • By the way: if the cereals are first germinated, and then dried and roasted, then the coffee will be sweeter and more aromatic, since during germination the starch turns into maltose sugar.
  • Further, my grandmother advises to combine all dried ingredients in equal proportions, grind in a mill and brew with milk. But, to be honest, there is practically no "coffee" in such a drink. Therefore, I fried all the ingredients separately and combined them. You can fry them in a dry frying pan, stirring constantly so that they do not burn or in the oven. I roasted the whole grains, roots and acorns right away, then ground them in a coffee grinder. But even after frying, the color of the cereals was light (like rye flour), so I additionally fried the resulting flour in a dry frying pan until brown. The example of rye shows how the color has changed. Light - these are roasted rye grains, subsequently ground, dark - this is the same ground rye, only fried even after grinding.
  • Kava (seven-ingredient coffee drink)
  • I think that everyone can change this drink "for themselves" by removing, adding some components, changing their proportions. And of course, you should not use this drink or its individual components if there are contraindications and health problems. In this case, it is better to repeat the hackneyed but necessary phrase: consult with your doctor.
  • The taste, color and smell of the finished drink vaguely resembles ground coffee.

  • Chicory.
  • In folk medicine, the roots and the aerial part were used as a means of increasing appetite and sedation, for scurvy, insomnia, hypoacid gastritis, hepatitis, cystitis, nephritis, as a diuretic, for enteritis, gastric ulcer, jaundice, tuberculosis, edema, especially of cardiac origin, sweating, anemia, gout, malaria, urinary incontinence, constipation, gallstone disease, hemorrhoids, toothache; plant ash was used to treat leishmaniasis, infusion and decoction - eye inflammation, various skin diseases associated with metabolic disorders (furunculosis, allergies, eczema), old wounds, ulcers; the steamed aerial part of the plant in the form of compresses was used for joint pain, inflammation of the lymphatic glands.
  • Dandelion.
  • Dandelion root, which accumulates up to 40% inulin in the fall, is known as a choleretic agent that strengthens and heals the liver. Dandelion root tincture stimulates appetite, has antispasmodic, laxative and blood-purifying properties.
  • Acorn.
  • A surrogate coffee is made from acorns, which is not only nutritious, but also a remedy for gastrointestinal diseases, rickets, anemia and scrofula in children. It is also useful for nervous patients and for excessive menstrual bleeding.
  • Rye.
  • Grain protein contains lysine and threonine - amino acids necessary for tissue growth and repair, production of hormones and antibodies. Rye promotes the body's resistance to diseases, has an expectorant effect, as a dietary product is useful in diabetes mellitus. It is popularly used as a mild laxative, a bran decoction, on the contrary, has a strengthening effect. Rye kvass is useful: it normalizes digestion, improves metabolism, and has a beneficial effect on the cardiovascular system.
  • Wheat.
  • In folk and official medicine, miracle grains are recognized as the best source of vitamin E, which is necessary for the normal course of pregnancy and fetal development. With its help, the excellent condition of the muscles of the skeleton and heart is maintained. A thick extract from the germ of cereals treats muscular dystrophy, chronic diarrhea, and respiratory diseases. Broths are used for general strengthening of the body, this is especially important in winter, when the immune system is most vulnerable.
  • Barley.
  • In folk medicine, a decoction of barley is used for inflammatory diseases of the stomach and intestines, as a fortifying agent after operations on the abdominal organs.
  • A feature of barley flour is a large amount of polysaccharide b glucan, which has a cholesterol-lowering effect, a good ratio between protein and starch, a rich content of provitamin A, B vitamins and microelements: calcium, phosphorus, iodine, especially a lot of silicic acid.
  • Oats.
  • Oats have many health benefits. It is used as an anti-inflammatory agent for inflammation of various organs, including the gastrointestinal tract. Oats contain an enzyme that improves the absorption of carbohydrates.
  • Due to the magnesium content in oats, the plant is used to improve the functioning of the cardiac and nervous systems and metabolism. Oats are an immunity-enhancing agent, therefore it is recommended to use it in the initial stages of hypertension. Oat preparations replenish the balance of silicon in the body, strengthen blood vessels and the musculoskeletal system of the body.
  • Oats contain not only silicon, but also phosphorus and potassium are found in it, so the plant is recommended for heart and kidney diseases. Oats also improve human mental performance.
  • Thanks to the beneficial properties of oats, many diseases can be cured with its help without taking medication.
  • By the way: coffee drinks can also be made from beets, Jerusalem artichoke tubers, carrots, various legumes, chestnuts, etc. But, this is a completely different story ...
  • My observations on each of the components separately (brewed at the rate of 1 tsp with a small slide for 200 ml of sugar-free water)
  • Barley, rye, oats, wheat behaved almost the same:
  • The taste is poorly expressed, rather neutral, the color is transparent brown, not saturated, the smell resembles cereal bread.
