Cooking method

  • I have already introduced everyone to the German breakfast, where freshly baked buns are a morning ritual. More details here https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=396414.0 .
  • So, speaking of a traditional German breakfast, one cannot but mention müsli (muesli). This is a delicious start to the day, a boost of energy and the right carbohydrates. Muesli is famous and popular all over the world, and it was the Swiss physician who invented muesli as a dish. It is to him, in everyone's mind, that billions of enthusiastic compliments fly away in the morning for a delicious and healthy breakfast. Dr. Bircher only cared about the health of his patients, so he didn't even think of patenting the rights to the invention. For him it was done by the enterprising John Harvey Kellogg, who created the American super-profitable concern for the production of muesli. Muesli came to Russia with the collapse of the USSR, in the early nineties.
  • The story goes ...
  • Once the Swiss naturopathic physician Max Bircher-Benner (Maximilian Bircher-Benner) with a scientific purpose went to the mountains. The main principle of this doctor in matters of nutrition was the postulate of maintaining human health through life in harmony with nature. Accordingly, harmonious nutrition for a person should also become as natural as possible. As a sociable person, he got to know the locals and was interested in everything that concerned their lives. He was the first to draw attention to the longevity of the Swiss shepherds and, finding out the reason for this phenomenon. At one of the halts, he got into a conversation with a shepherd, who was already 70 years old. But by the way he moved along the mountain paths, he could in no way be ranked among the old people. The men got into conversation, and the shepherd suggested that Benner share a meal with him. The dish impressed the scientist with its simplicity, nutritional value and naturalness. The fact is that at that time the main food of the shepherds was porridge, but not simple, but prepared according to a special recipe. It was boiled from ground wheat and then seasoned with milk, honey, as well as blueberries and strawberries. The shepherd was still eating an apple on the dish. He said that all his ancestors ate this way, and everyone in his family is long-livers. Few of them go to the hospital, all physically strong and strong. And everyone in his family eats this mixture morning and evening.
  • Experimentally convinced of the miraculous properties of such porridge, Dr. Benner improved the composition of the dish and introduced it into the diet of patients in his clinic. The result exceeded all expectations. Subsequently, on the basis of this wonderful porridge, the same Dr. Benner created a completely new dietary product, which was named müsli (muesli).
  • From that meeting, the inventions of various recipes for muesli began: they were made from wheat, oats, rice, rye, millet and barley. The grains were crushed or flattened, but they were never heated too much so as not to destroy the nutrients. Juices, water and milk were used as additives. All these ingredients were thoroughly mixed, to which were added a chopped apple, berries, as well as chopped walnuts or almonds. Now many housewives are experimenting with this dish, coming up with new flavor combinations. And in the Alps, muesli is still prepared from pressed cereals, adding any fruits, nuts and seeds to them.
  • The classic muesli should include whole grains (they contain all the nutrients), fresh fruits and dried fruits. All components of the dish must be environmentally friendly.
  • The composition of muesli can also include cereal bran, but oats are the basis of the product. These components are rich in fiber and dietary fiber, which stimulate the intestines well and help remove harmful substances from the body. Whole grains are rich in B vitamins and minerals, and wheat germ contains a unique vitamin E. Muesli is rich in minerals, vitamins, proteins and amino acids. Cereals in their composition are supplemented with a number of components that determine the nutritional value of the product. Cereal supplements are dried fruits, nuts, chocolate, fructose and honey. Fruits contain pectin, potassium, iron, plant pigments, and a number of beneficial minerals.
  • Nuts in combination with grains allow the body to better absorb protein amino acids. In addition, nuts contain polyunsaturated fatty acids necessary for the body, which it cannot produce on its own.
  • Today everyone knows about the existence of muesli, they consider them to be almost a dietary dish, although more precisely it is a product of proper nutrition, since it is customary to call low-calorie foods dietary. However, this product contains tons of nutrients, is very satisfying and provides an energy boost that will last for a long time. Although, for muesli to really benefit, it's important to cook it right!
  • There are special grain mills for making muesli at home and can be purchased on German websites. Many people in Germany, Switzerland and other countries make muesli from whole grains themselves using grain mills. I myself "caught fire" with this device about half a year ago. There are different types of grain grinders, they look like this:
  • Strawberry muesli Good morning. Erdbeermuesli Guten morgen.Strawberry muesli Good morning. Erdbeermuesli Guten morgen.
  • In its original, classic version, muesli is low in sugar. Therefore, you should not get carried away with it when preparing muesli. It is better to replace the lack of sweetness with the addition of honey. However, many people add honey at the stage of heating the muesli when cooking them in an oven / pan. This is not worth doing, since the beneficial properties of honey are lost when heated, you need to add it to a ready-made dish before eating! Of course, thermally unprocessed muesli is healthier, but processed muesli are better absorbed, so it's up to you whether to use raw or baked muesli. Muesli can be dried and blushed in a dry frying pan or in the oven for 30 minutes at 130 degrees.
  • Get to the point! Thoroughly rinse the nuts and raisins, chop the nuts. Studying the cuisine of Germany and neighboring regions (Austria, Switzerland), you can see that almonds and hazelnuts are widely used in cooking from nuts. Mix the Hercules oatmeal with sugar and a few pinches of spices (I used a fragrant mixture of gingerbread spices, I have it in my recipes) and brown in a dry frying pan until the sugar melts. We do not constantly interfere, since sugar needs contact with a hot surface to start melting, but we do not go anywhere either, the whole process will take no more than 10 minutes.

  • The flakes began to brown, almost all the sugar has melted - it's time to add chopped nuts and raisins, stir constantly. When the mixture becomes a pleasant color and dries up, remove from heat.

  • Add wheat germ flakes, mix. Our muesli is ready!

  • Now we need fresh blueberries or strawberries. We leave the most beautiful berries for serving, we puree the rest. Put half of the yogurt (I have homemade) in a serving bowl, then mashed strawberries, again yogurt. Sprinkle generously with prepared muesli, garnish with strawberries and pour over with honey.

  • Muesli is an instant product. For adults, they can be prepared in a few minutes. A small portion of the "porridge" is poured into a bowl and poured over with milk (cold or hot), juice, yogurt or even low-fat sour cream. You can pour it just before use, or you can put it in the refrigerator overnight.
  • For children, it is necessary to cook muesli a little longer, using heat treatment, so that the components of the porridge are better absorbed by the children's stomach. For babies, it is recommended to boil muesli in boiling milk or water for a few minutes. Children under three years of age can only be fed special cereals for baby food.

Note

From wikipedia:
Muesli (from German. Müsli, (Bircher) müesli, noun) is a breakfast food made from raw or baked cereals, dried fruits, nuts, bran, wheat germ, honey, and spices.

Muesli was invented in 1900 by the Swiss physician Maximilian Oskar Bircher-Benner for hospital patients where fruits and vegetables were an essential part of a healthy diet. The term comes from the German noun "Mus" - "puree".

Muesli in its modern form has spread to Western countries since the 1960s as interest in healthy eating and low-fat diets grew.

Muesli differ in terms of storage time, heat treatment, and the presence of preservatives. Natural muesli does not contain any preservatives, as it consists of natural food ingredients. Muesli comes in two flavors: raw and baked. Raw muesli (muesli without heat treatment) contains rolled oatmeal, seeds, nuts and dried fruits.

In baked muesli (granola, crunch), cereals are mixed with natural juices, honey, sometimes a small amount of vegetable oils, and baked at low temperatures. In the oven, muesli gets a more pronounced and richer taste. Baked muesli is sweeter than regular muesli.
