Eintopf Ueckermuende

Ingredients

sauerkraut 400 gr.
pork 200 gr.
smoked sausages 100 g
bacon, bacon with a slot 100 g
water or broth 1.25 liters
potatoes 5-6 pcs.

Cooking method

  • Ueckermünde is a type of eintopf, the main ingredients of which are sauerkraut and smoked sausages and bacon. This soup is named after the city where it is common. Ueckermünde (Uckermünde) is located in Mecklenburg-Western Pomerania. In fact, this aintopf is very, very similar to our cabbage soup.
  • According to the original recipe, boil sauerkraut, pork, bacon and Polish sausage in boiling water for 20 minutes. Add potatoes and chopped vegetables and cook for another 20 minutes. Top up with water if necessary. Season the soup with flour fried in margarine. Cut meat, bacon and sausage into pieces and put in soup.
  • I slightly changed the technology to suit the tastes of my family, and cooked in a pressure cooker, not on the stove.
  • 1. Cut pork into large pieces, small pork fat and sausages. I chopped the onion into cubes, grated the carrots, cut the potatoes into cubes.
  • 2. Fried bacon with pork and onions in a pan.

  • 3. I sent frying, potatoes, all the vegetables, sausage to the pan of the pressure cooker and poured the broth. Salted and pepper. Set to cook until tender.
  • 4. Fried flour in butter and mixed with chopped parsley. After the end of the SLE program, I filled the soup with flour and let it boil for another 2 minutes.
  • 5. Gave it to brew under the lid for 1 hour.

Note

It's damp and cold and disgusting here now. Thick hot soup is very out of place. In general, I became a big fan of the intopfs. We have almost replaced the traditional soup and borscht.
