Cooking method

  • A dish with such an unusual name is on the menu of local restaurants in the picturesque medieval town of Hameln in lower Saxony. It was invented in January 1970 by the owner of the Rattenfängerhauses restaurant and has since been very popular with tourists.
  • According to legend, in 1284, Hameln was overrun by hordes of rats. The townspeople could not get rid of them in any way. Insolent rodents attacked cats and dogs, bit babies and livestock. The magistrate has announced a reward to anyone who will rid the city of pests. And then one day a man in colorful clothes appeared in Hameln and promised to deal with annoying animals. For his services, he asked for "as much gold as he could carry." Desperate residents agreed to his terms. The stranger took out a flute and began to play a melody, to the sounds of which rats from all over the city came running to him. To the accompaniment of a flute, the musician led the bewitched rodents to the Weser River, in which they drowned. However, the magistrate refused to give the promised gold to the rat-catcher, and he left the city, holding a grudge.
  • A few days later the mysterious stranger returned to Hameln. And again the flute began to play, but now city children came running to its sound, who, together with the rat-catcher, went to the mountains and disappeared forever.

  • Cut the pork into thin, long strips (these are the "rat tails").

  • Chop olives, mushrooms and corn. Peel and chop the tomatoes. Cut red bell peppers into thin strips. Chop the onion finely.
  • Fry the pork in half of the butter, flambé with Calvados (I have cognac), salt and pepper.
  • Flambing means scorching, burning with a flame, or pouring something alcohol-containing over the dish - vodka, rum, cognac, brandy, grappa, whiskey, strong liquor and then set it on fire. The blue flame will quickly go out, and a scorched delicacy will remain in the pan, fragrant with a wonderful aroma that can give a seemingly familiar dish a unique piquant taste and aroma.

  • In another skillet, melt the remaining butter and fry the onions until transparent. Add white and red wine and evaporate to 1/3. Add olives, mushrooms, baby corn, tomatoes and bell peppers. Cover and simmer.
  • Gradually add brown sauce, then add with mustard, tomato paste, Worcestershire sauce, Tabasco salt and pepper to taste. Add cream and port, stir.
  • Add pork, stir and let the flavors combine.
  • Rice with vegetables and fresh salad are served as a side dish.
