Fancy scrambled eggs

Ingredients

eggs quantity at will
salt taste
bread for serving

Cooking method

  • Wash the eggs thoroughly, wipe them off and put them in the freezer for at least three days.
  • Remove eggs from the freezer and keep at room temperature for about an hour and a half.
  • Break (my eggs were large, but after 15 minutes the protein completely thawed)
  • Fancy scrambled eggs
  • Separate the whites from the yolks.
  • Fancy scrambled eggs
  • Salt the proteins, shake slightly with a fork and fry.
  • Put the yolk on top of the egg white. Serve with a slice of rye bread (I had wheat with sesame). Cut the yolk in half and spread on the bread. The yolk tastes very much like butter, only even more tender. Try it!

It's funny. I had a similar effect with yolk when I tried sous vide. Put in cold water and multi-cook function 65 degrees 1:15. Although the protein was curdled, it turned out to be liquid, but the yolk curled up and was perfectly smeared on the sandwich. Next time I will try to put in hot water for half an hour, that is, I will turn it on as it was, but I will put the eggs in 35 minutes.
