Cooking method

  • I expose this recipe at the request of the girls. There were a lot of guesses and doubts about the Polaris topic about how to make blanks in a pressure cooker, under what parameters.
  • I have been using the pressure cooker for preparing salads for the winter for many years, but it is a full-fledged one (it is 9 liters). This year I tried to make a lecho for testing in Polaris. The result is pleasing. Faster and, most importantly, at a pressure of 1 (this is 40 kPa), the vegetables turned out uncooked.
  • I always dubiously share the recipes for the blanks, because everyone has their own understanding of what “delicious” is. In this recipe, salt and vinegar can be easily customized to suit your needs. Therefore, I recommend that you first cook a half portion, try it, and then, if you like it, prepare it in larger quantities.
  • Cooking.
  • Cut the tomatoes into triangles ~ 0.8-1 cm thick (first lengthwise into 4 slices, then each slice across).

  • Cut the pepper into strips of the same thickness.

  • Pour vegetable oil into a saucepan. Add prepared vegetables, stir lightly. Close the lid of the pressure cooker, set the valve to the "Pressure" position. Please select "Manual" mode, pressure - 1, time - 7 minutes.
  • While the vegetables are stewing, peel the garlic, chop it with a garlic press. Cut the dill not too finely.

  • Measure out sugar, salt, vinegar. acid.
  • After the readiness signal, cover the lid of the pressure cooker with a tea towel folded in 4-6 layers, and gently release the pressure by opening the valve.

  • Add garlic and dill to vegetables, add sugar, salt and vinegar. acid.
  • Close the cover and valve again. Turn on "Manual" mode, pressure - 1, time - 1 min.

  • Release the pressure immediately after the signal. Stir the salad. Taste it, if everything suits you - put the lecho in a sterile jar, sterilize for 10 minutes and roll up.
  • (I sterilize in the airfryer. I take the cans with screw caps. I put a low wire rack in the grill, turn on the "Preheat" - 6 minutes, then install the expansion ring.
  • In a preheated grill I put a jar on the wire rack and turn on 180 degrees, high speed - 5 minutes;
  • then 150 degrees, high. speed - 5 minutes. I take it out, roll it up without turning it over, wrap it in 2-3 newspapers.)

Note

This year I came across a salad clipping from a culinary newspaper. The recipe was as follows:
« "It couldn't be easier."
Cut 1 kg of tomatoes and 1 kg of sweet pepper into strips, stir ½ cup. vegetable oil. Cook for 25 minutes, pour in 2 tsp. vinegar essence, add a chopped bunch of dill and a head of garlic. Cook for another 10 minutes, put in sterilized jars, roll up. "

I liked this recipe because the tomatoes do not need to be rolled through a meat grinder, as is usually done for lecho. It turns out more like a salad (that's why I called it "lecho salad").
In the original recipe, as you can see, there was no salt, I added it. You may want to reduce it or remove it altogether.
Acetic acid, for my taste, can be taken a little less, but the household liked the option with 1 tsp, so I indicated from 3/4 to 1 tsp in the ingredients.

Advice.

one. I gave the original version of the recipe so that you could understand the principle of calculating the time for cooking in a pressure cooker. I divide the time offered for cooking on the stove by 3. I take into account that when the pressure is set, heating and cooking also take place, although not so intense.

2. I advise you to cook salads for the winter at pressure 1. Gentle heating - the shape of the products will be preserved.

3. My family and I liked the salad. Perhaps, for a small amount of such a blank, I will remove the skin from the tomatoes so that nothing gets in the way.

4. All blanks that do not require cooking after opening always sterilize. Troubled, but ... The phrase of one resuscitation doctor that it is possible for 20 and 30 years to do seaming, and one single bank will ruin you ... I do not risk it.

Lena, and really, very easy to prepare! I'll take it as a keepsake, I love short blanks

Tanya, I am pleased that you have noticed the recipe.
The salad really lives up to its name. I described cooking much longer than I did. In the harvesting season, the speed of processing vegetables is important. And then I liked the taste (usually mine are indifferent to lecho).

What a cool winter salad, Helen! In the summer, I did not dare to try to cook lecho in our Field, it's a pity that my tomatoes have been gone for a long time, I will bookmark them until the next harvest. Thank you
Shelena
Gulenka, thanks for stopping by for the salad.
Alas, in the harvesting season, there is absolutely no time to exhibit recipes. I decided it was better late than never.
She also promised Tanya-Moskov79 (she still has ground vegetables).

Lenochka thanks for the recipe! So I waited, I think I'll just put it out right away, but I took it and got sick. But I think in a couple of days I'll be in the ranks then I'll cook and report back. True, my tomatoes are pink, it will probably be pale well, but I think it will not affect the taste.
Lena, did you not do anything with eggplants? A whole banana disappears, I can't think of something so interesting to cook?
Shelena
Tanyusha, get well soon!!!
Pink tomatoes are fine too, of course. I have ripe greens. Sort "Cream". You can add tomato paste for color.
Today I tried the leftovers of yesterday's salad. Once it has been infused, it has become even better.
Tan, I will write about eggplants later to Lichka.
Moskov79
Lena thanks again
Shelena
Tanya, there is nothing.
