Master class on assembling 3D cake Bear

Ingredients

Sponge cake 21 X 29.7 cm (for 5 eggs) 1 PC
Sponge cake d = 21 cm (for 4 eggs) 1 PC
Sponge cake d = 18 cm (for 4 eggs) 1 PC
Cream
Canned food. apricots 1 can
Sponge cake d = 21 cm (for 3 eggs) for potatoes

Cooking method

  • For a long time I was looking for MK to assemble the "Bear" cake from biscuit cakes, but did not find it. Mostly there is a honey cake, but I needed a biscuit ... so I did it as I thought of. Maybe someone else will come in handy.
  • We bake a rectangular biscuit (I baked vanilla biscuit on boiling water). The size of the A4 album sheet is 21 X 29.7 cm (height 4.5-5 cm) and biscuits d = 21 (height 7 cm) cm and d = 18 cm (height 10 cm)
  • I cut a rectangular biscuit into 2 cakes, then cut out the legs from one edge, and rounded the corners from the second edge, as in the diagram

  • Soak the biscuit. Layering with cream. For the whole cake I had enough cream from 1 liter of cream + 500gr. vanilla curd paste + 15 gr. gelatin
  • We shape the legs and body of the bear, put it in the refrigerator for the night, so that the donkey would stand, soak.

  • I cut a biscuit d = 18 cm into 4 cakes (it was better to bake 2 cakes of 2 eggs, because the height of the mold was not enough and had to be added with foil, as a result the top was not even),

  • soaked, in a sliding ring, layered with cream with apricots, put it in the refrigerator overnight, so that the donkey would stand, soaked.
  • The next day, I cut off the edge a little, as if rounding the edge, glued pieces of biscuit, these will be paws, paws, a tail and a heart

  • She formed the legs and arms with potatoes and covered everything with confectionery plaster
  • for this purpose I had one more biscuit for 3 eggs, d = 21 cm and charlotte cream for 3 eggs. I made the plaster, as Luda-Huska taught, a biscuit to the cream 1: 3.

  • We shape the head. Round the bottom and top along the edge a little

  • cut off part of the biscuit, as in the photo, and shape the nose. We form ears from pieces of biscuit, set on cream and fix with toothpicks.

  • We coat with potatoes giving the shape of the nose and ears we need, coat everything with plaster. and leave in the refrigerator for several hours.

  • I installed a support on cocktail sticks on the body, into which I stuck skewers, so that the head would then sit firmly

  • Next, cream wet meringue with a nozzle, the grass decorated our bear, smoothed ears, nose and legs with a pallet and a spoon dipped in cold water.
  • I needed a cream of 10 proteins, cooked in 3 doses.
  • I drew the eyes and nose with chocolate on a file, after decoration transferred it to the cake and drew a mouth from a cornet.
  • She put a white cake in front of the bear so that there was where to stick the candles for the birthday girl)))

  • And a cutaway photo of the cake to understand what layer of cream was between the biscuits. I was afraid that it would not be enough and the cake would be dry, but no, everything was in moderation.

Alyona, many thanks for MK. I was very pleased that the MK is made of biscuit. Maybe I will decide now on such a cake.
And the cut is very tempting !! I would like to try.
Leka_s
Lyudochka, if I still do, then I will do the bottom with charlotte, after all, the creamy curd cream is very delicate, and 5 layers are high for it.
During transportation, the cake was as if it were alive, I was afraid that my legs would drive off. It’s good that we had to take it not far.
Elena Tim
Oh, what a junk! It's just a miracle!
I myself, of course, am not capable of such feats, so I always admire with pleasure ... how someone plows.
Alain, an incomparable bear, just lovely! Your pens are gold!
I would have guarded him with a bazooka, I would not have let him cut!
Husky
Alyona, this is where the legs could drive off, if they are made from a single piece of biscuit. I'm sorry, but they, along with the booty, were cut out with one bottom piece of biscuit.
Alain, how high did the cake come out in finished form?

They tried on him for so long ... all the hand did not rise to cut
Leka_s
People, here the priest swayed suspiciously, and the legs themselves did not move of course
And I didn't even have enough height to measure or time, the thought was this, but it went somewhere ... well, probably 30 centimeters was definitely
Revinenok
What a beautiful !!!!

Is MB a wet meringue? is she an Italian meringue?
lungwort
It turned out very, very nice! Alena, forgive the old fool, but what about the hairpin sticks? Are they still in the cake?
Leka_s
Catherine, yes MB is a wet meringue, here recipe there is. Italian meringue, as far as I understand, is a custard protein cream, they differ in the method of preparation. But this does not matter, you can decorate with charlotte and ganache and Italian and Swiss meringue, who loves what and which cream turns out better
Leka_s
lungwort, Natalia, sticks-skewers remain in the cake and are removed when cutting ... you can see them in the photo of the cut
Olka I
Super!!! Thanks for mk :-)
Irina Dolars
Alena, thanks for the MK! He even without cosmetics good without fur: with one lining
On our forum, apparently, bears are held in high esteem

Are the legs too long?

Leka_s
Thank you girls!
Irin, the bear is such a beast, he is probably held in high esteem everywhere

and the legs may be too long, in theory they should be 1/4 of the length of the whole bear, in a standing position ... but there were additional pieces of cake

_Milana_
Thanks for MK! Teddy bear. The only thing missing is the fur on the bottom of the legs. With her, the legs would have a more complete look.
Leka_s
_Milana_, let's take into account! Thanks for the tip!
thrill

Irene

Mistress_Nastasya
AnastasiaNN, AnastasiaNN, Hello!!! please tell us, did the cakes and cream follow the recipe? AND DECORATED WITH WHAT CREAM? thank you in advance)))
AnastasiaNN
Mistress_Nastasya, Hello !!! Honey biscuit cakes with baking powder. Cheese cream + walnuts. Decorated with vegetable cream Shantipak, butter cream would heavily weight the cake.
Mistress_Nastasya
thanks for the quick answer
Mistress_Nastasya
AnastasiaNN, Anastasia and another question for you, how much and in what forms did you bake the biscuit? do you think the structure will withstand if I take butter biscuit and cream yoghurt and curd with gelatin?
Bertik
Hello! Please tell me if you use ice cream + gelatin. suitable for a cake?
Leka_s
Good day! Creamy curd with gelatin behaved well and ice cream with gelatin should also work. But all the same, I would take the cream denser on the bottom.
