Horseradish Orange Sauce (Orangen Meerrettich Sauce)

Ingredients

Sugar 100 g
Medium orange (juice and zest) 1 PC.
Lemon juice from two lemons (I added apple cider vinegar from one plus)
Grated fresh horseradish 2 tbsp. l. with a slide
The yolks are cool 3 pcs.
Finely crushed rusks, fried 2-3 st. l.
Apple cider vinegar is natural! 2-3 st. l.
Salt to taste not in the recipe
Water If required

Cooking method

  • Simply amazing for our taste sauce - unbeaten, sweet and sour, not sharp, but with a delicate horseradish taste. And what a beautiful color! It seemed to me that it suits both fish and shrimps, poultry and game.
  • The sauce is taken from Austrian cuisine, the recipe was slightly altered, since according to the original recipe the sauce did not thicken, but the components of the recipe are completely preserved. Changed only to favor homemade apple cider vinegar. I used it instead of part of the lemon juice, it is more economical, and the taste is softer.
  • I am writing an author's recipe, but I want to warn you that you may need more crackers or other thickener.
  • Preparation
  • Peel fresh young horseradish, rinse, dry and grate on a fine grater, cover so as not to run out of steam.

  • Remove the zest from the orange with a grater, squeeze the juice from lemons and oranges (I used the juice of one lemon, and replaced the juice of the second with 2 tablespoons of apple cider vinegar in addition to the amount specified in the recipe)

  • Heat the juice, zest and sugar in a small saucepan almost to a boil and until the sugar dissolves, remove from heat, cool.

Note

The sauce with this amount of sugar is quite sweet, but it is balanced by the sour juice and spicy horseradish. I think that if the orange comes across sour, then you can leave such an amount of sugar or reduce it quite a bit.
The sauce is not spicy at all, and does not even cause heartburn
Did half the portion - used one large yolk.
Crackers should be very fresh and medium, so to speak, "roasted" - not burnt and not white.
