  • In Germany, the fashion for gingerbread houses originated in the 19th century. Immediately after the first publication in 1812 of the Brothers Grimm fairy tale "Hansel and Gretel", the houses became very popular at Christmas markets. Under the influence of the fairy tale, making gingerbread houses became popular in many families. People competed, whose houses are more original.
  • The bakeries quickly began mass production of a variety of gingerbread houses for all tastes. For Christmas, they organized sales exhibitions and all kinds of contests for gingerbread houses.
  • So for the first time I decided to make a gingerbread house. This is not a quick process, it takes 2-3 days.
  • I made the dough for my house using the choux method. To do this, dilute honey and jam with a little water, add sugar and cinnamon.
  • Put on fire and bring to a boil.
  • Pour a little less than half of the flour into the hot mixture and stir quickly. Remove from heat.
  • You want this dough to cool to room temperature and not be warm.
  • Mix flour with cocoa, baking powder and lemon zest.
  • Cut butter at room temperature into squares.
  • Combine custard dough, flour, butter, egg with yolk, salt and lemon juice.
  • Knead a homogeneous dough. Knead for at least 10 minutes.
  • The dough should be elastic, pliable and not sticky to your hands.
  • Add flour if necessary.
  • Now the dough needs to be divided into 2 parts (it will be more convenient to roll it out) and wrap each part with foil and put in the refrigerator for at least 2-3 hours.

  • The stand for the house can be made in any shape.
  • The dough is rolled out 0.5 cm thick.
  • After the dough has been rolled out, it is best to place it on baking paper.
  • Put parts on the dough and cut out with a wheel for cutting pizza.
  • Now we cut the paper so that we can transfer the details to the baking sheet directly on it.
  • Bake at 180 degrees for about 15 minutes.
  • Carefully cut out the windows and door while the gingerbread is hot.

  • When the baked goods have cooled down, put them in the box and set aside the building for the next day.
  • Now we make the icing.
  • Beat the protein with lemon juice and when the foam begins to form, we begin to gradually add the powdered sugar.
  • The frosting is ready when it is thick enough.

  • To assemble the house, I decided to try two methods of gluing parts: icing and melted chocolate.
  • The chocolate must be melted in a water bath.
  • Fill a pastry bag with icing, if you are using chocolate icing, then you need another one.
  • Chocolate hardens faster and is more durable. Either way, the glaze can be used for decoration.
  • We start assembly from the walls in turn. We install them on a stand. It is better to put a support near each wall, for example, a glass or a jar.
  • When the walls grip well, we fix the roof and also always with supports, otherwise the roof will crawl down.

  • Once the house is solid enough, start designing however you like.
  • I decided to make such a cookie roof. It turned out like a tile.

Olyaof course, gingerbread dough can be different. After baking, the cakes were smooth, without bubbles. By the way, I wanted to make a pattern on the walls - imitation of logs.With long wooden skewers along the entire length I was going to want to make dents, like logs, but I got carried away and forgot. It seems to me that after baking they would be visible. It is very convenient to cut out windows and doors immediately after baking. The dough does not crumble and everything turns out smoothly. After all the parts have cooled well, before assembling, I rubbed the edges lightly with a fine float to better adhere when gluing. Only this must be done very carefully. The house is delicious. We admired it for 3 days and began to break off a little. Not dry at all, the structure is gingerbread. Lemon peel is very pleasant. So do it, I sincerely wish everything to work out. It brings so many positive emotions!

Of course, I myself am to blame - I poured a little less than half of the flour into the boiled mixture (as written) and removed it from the heat - it was inconvenient to stir on gas. And when the dough cooled down, it was a frozen caramel mass, completely solid. I softened it as best I could and mixed it into the remaining components. The dough turned out to be very tasty and not hard (except for those lumps that did not disperse ...) Maybe it was necessary to pour in a little more water (I poured in only 10-15 ml), maybe something else ... But now I look at the composition of the tea leaves and I understand that when it cools, it should still freeze into caramel, or then it is necessary to indicate in the recipe itself that the water is about 50 ml, since in my opinion, for dilution 2 tbsp. l. jam is enough 1-2 tbsp. l. water, or something is wrong here .... Maybe add oil to the warm mixture?

It is a pity that it did not work out right away. I really hope that the house as a whole has turned out.
