Vienna cheesecake from A. Seleznev

Ingredients

Cottage cheese 500 g
Sour cream 30% fat (I have 20%) 125 g
Eggs 5 pieces.
Butter 125 g
White sugar 125 g
Vanilla sugar 1 pack
Flour 2.5 tbsp. l.
Baking powder 1 pack
Breadcrumbs and fat for mold
Zest and dried fruits By choice and taste

Cooking method

  • - Grind the softened butter well or beat in a food processor with vanilla sugar, white sugar and yolks.
  • - Pour sour cream into the resulting mass, add flour mixed with baking powder. Mix well.
  • - The cottage cheese should be without grains, so it can be passed through a meat grinder 2 times or smashed with a foot from a blender and add it to the total mass. Beat everything with a mixer.

  • - At the end, beat the whites until soft peaks and gently stir the mixture with the whipped egg whites. Add zest and dried fruit of your choice. Grease the mold and sprinkle with breadcrumbs.

  • I used the new forms of Nordic Ware that many loved on the forum, they are well suited for this recipe due to the fact that they are thick-walled. Only you need to lubricate very well.
  • - Bake the cheesecake for about 2 hours at 160 grams, so that the moisture gradually evaporates, and the cheesecake does not settle.
  • - Carefully cut the baked cheesecake with a knife around the walls of the mold, then remove.
  • Serve with jam or sauce.

Note

All the eaters liked the result, despite the fact that I overexposed in the oven for 20 minutes - I was distracted by work.
I added a pinch of salt to the mass.

This particular recipe is not even a dough, but rather a casserole or cheesecake, and that turned out well. And although I overexposed it, even the crust turned out to be delicious, not burnt, but simply baked.

Rada-dms, the cheesecake is good. But for some reason I had a lot of 2 hours in my oven. Dried out strongly. I did everything according to the recipe. I set the time on the timer. And my cheesecake was just baked, even in the depths on the cut you can see that the crust is very baked. Two hours. What did I do wrong? We didn't throw it away, we ate it with jam. But, I think that according to Sasha's idea, it should not be like that.

Yutan, I think that Olya did it so well at this temperature due to the thickness of the mold. I have already broken my head in something to bake to get the same effect. I do not have thick-walled forms, I do not plan to buy Nordic, so I need to get out.

Yutan, I also, as you can see in the photo, have a heavily baked crust. There is no photograph in Seleznev's book, so I had nothing to be guided by. I did everything according to the recipe. Perhaps, if you have a thin-walled form, then it is more baked.
But I just don’t know how to make the moisture evaporate and there’s no crust. By the way, in Ukraine they are doing something similar, and there, too, a crust is good.
So I think, can you pour water into a pan and put a mold in it, cover it with foil on top, that is, make it like a cheesecake?

In general, I noticed long ago that the recipes in books from "stars" very often suffer from inaccuracies, or rather, we suffer! I have several recipes of this kind for example, but I will not point a finger. Let the editors and authors be on the conscience.
In principle, I will not discount this recipe, but I will try to adjust it for myself.
But for the competition she did not find it possible to deviate strongly from the recipe.

Baked in a pressure cooker-multicooker Orson 4002, a portion is yours, the "Casserole" mode is our only mode for baking. She baked for a long time, first 1 hour 30 minutes, then another 40 minutes and 20 minutes cooled in a pressure cooker, then took it out and poured it with chocolate.
