Multi-cooker bread (any)

Category: Yeast bread

Ingredients

Wheat flour 750 g
Any flour (you can use buckwheat,
rye, any flakes)
150 g
Water 515 ml
Salt 3 tsp
Sugar 1.5 tbsp. l.
Vegetable oil 1.5 tbsp. l.
Yeast 2 tsp
Malt 2 tbsp. l.

Cooking method

  • Here is my most common recipe for 1.5 kg bread that has been tested many times:
  • Stages:
  • 1) Pour everything into the bread maker and select the yeast dough mode.
  • 2) Then the dough mode (15 min).
  • 3) After the end, put the dough in an oiled multicooker and turn on the heating mode for 20 minutes.
  • 4) Then turn off the cartoon and after 1 hour (for rye after 2-3 hours) turn on the baking mode for 65 minutes, and after the time has elapsed, turn the bread over and put it for another 25 minutes in the baking mode.

  • He baked rye bread in the same way. The only difference is that: I take rye flour - 800 g, wheat flour - 100 g, malt - 4 tbsp. l. and steamed, instead of sugar I use honey - 2 tbsp. l., I add 1 tbsp. l. vinegar, 3 pcs. finely chopped prunes, 1 tbsp. l. cumin. , salt - 3 tsp.
  • vegetable oil - 1.5 tbsp. l.

Note

Dear bakers!
For over half a year I have been baking bread in a cartoon. Partially refused to bake in a bread maker.
Advantages: 1) The roof of the bread does not collapse;
2) No holes from kneading blades;
Always the same result. Bon Appetit!

I took this recipe here, but I won't find a link (may the author forgive me)
It is called "amazing lavash in a slow cooker"
so: 4.5st flour
2 tbsp of water (40 *)
1 tsp dry yeast
1 tsp salt
** multicooker glass
1) mix all the ingredients with a spoon for 5 minutes. The dough is sticky, slightly thicker than for pancakes
2) leave warm for 1 hour
3) knead again with a spoon to settle the dough
4) grease with cartoon oil
5) turn it on for 5 minutes on heating (the dough is meant already in the cartoon)
6) turn off the cartoon and after 30 minutes turn on baking for 30 minutes
7) turn off the oven, turn the bread over with a double boiler and put on baking for another 30 minutes

when finished, remove and cool on a wire shelf .... no more heating is required! the bread turned out to be like a ciabatu, in the trail. just try to add olives to the dough)))

Thank you very much for the recipe, irism!

Quote: Maroussia29

Tell me, no one in the cartoon tried to bake buns on dough mixed in HP? It is painfully tempting that the dough in the multi can fit and bake better.
Marusya29
How have you not tried it ?! I baked ... I remember even more than once ... I baked buns in the form of a "chamomile", I even laid out a photo somewhere, though now I find it difficult to remember which topic ... The buns are excellent, the drawback in my opinion is one - they pale on top, but if this fact does not bother you, then bake for a long time without hesitation, everything turns out great!
After I became the owner of a multicooker, I baked a lot of all sorts of / different breads (both yeast and yeast-free) in it, here's what I remembered at the moment:

Crochet I understood correctly - we knead the dough for a woman in the dough mode in a bread maker, and then the dilution is already in the multicooker bowl, and how long does it take to bake it in a multicooker?

Matilda-N
Kneading and the first proofing in HP, I do it in the "Yeast dough" mode (25 minutes kneading + 1 hour proofing). Next, knead the dough and transfer it to the multicooker bowl. We turn on the "Heating" mode for 20 minutes. After 20 minutes, turn off the multicooker and wait another 40 minutes. Total second proofing in a multicooker takes exactly 60 minutes (1 hour). Well, the last number is the "Baking" mode, I put 60 + 20 minutes, although 60 minutes of "Baking" is quite enough, I checked, an additional 20 minutes is more likely for beauty (the top turns out to be rosy, not white). But this is at your discretion.
I just finished soaking a woman baked in a slow cooker, a double portion of syrup left (200 grams of sugar + 400 ml of water + 60 grams of lemon juice + 60 grams of brandy + 10 drops of cognac essence + 10 drops of lemon essence = stunning aroma). Before pouring syrup on the "woman", I pierced her through with a wooden skewer, the syrup was absorbed at once!
Here is my today's woman (a quick photo), in the photo she is somewhat lighter than she really is:

This is the question I have for the master bakers:
what kind of malt is needed for baking ??
I found many types of it among the bourgeoisie, I was confused, I wanted to order right away in an internet store, but I don’t know if the right one for bread is
which they use for beer ....
Help me decide ... and also the price of malt is ridiculous, cheap ...
firstly, there are no packages less than 3 kg, and secondly, these 3 kg cost 80 rubles.
Tell me, pliz ...

Rye red fermented malt is needed.

Aprelevna
Admin, Thank you so much!!
I can only ask someone from Russia to bring it, but so far no one is going to visit us.
I am looking here in internet stores. I found rye flour, it costs 30 rubles / kg.
But I have not decided on the malt yet.
Tell me, can I bake it without malt?
Admin

You can do without malt, but the taste of the bread will not be so rich!

Try to bake bread on dark Porter beer, there are hops, different malt.
Aprelevna
Yeah, I got it, I found PORTER beer.
It also turns out to be here and there are different berry tastes ...

Thank you, Admin!
Another question arose:
rummaged in the internet and came across different ready-made mixtures for baking bread.
How do you feel about these mixtures?
Elenka
And here I am baking bread temporarily in MV. while the bucket in HP is not working.

Helen, wow, what a wonderful bread you get! And you bake with a coup? Well, how do you and your homemade tastes of the multi bread? Like?
I also sometimes bake breads in a multi, for a change, today I just decided to diversify, now there is an onion with dill in the proofing in a multi ...
Elenka
Inul, I do not turn it over, but put it under the grill in a micra for 10 minutes. Somehow I don't like the overturn, it turns out to be crushed.
This bread is made from wheat leaven, its crust is very good. tender is obtained in MV. I like. The family members were praised, but they are already not surprised at anything - the baluvanny steel.

This is a bread recipe from our forum from LaraN, catch:ONION BREAD WITH DILL
I baked it several times in HP, in the cartoon today I put this dough for the first time.
May @
Tiny , Thank you. I once baked with raw onions and fried, and I liked fried more. Okay, I'll try this and that, but always with dill.
Elenka
Innochka, show me this bread later! As the last will be finished, I also want to bake this.

Concerning relatives ...
Last night my husband was sitting at the computer, I put a bowl of ice cream under his nose (I made it for the first time) and wait for a reaction - he realized that he had cooked it himself. He says, well, now you can't buy anything - all the houses are there. And you will not surprise ...
