Lean mayonnaise

Ingredients

Wheat flour 150 g
Water 450 g
Vegetable oil 140 g
Orange juice 3st. l.
Mustard (I have Bavarian sweet) 3st. l.
Salt 2h l.
Sugar 2st. l.

Cooking method

  • Combine flour with a little water. Grind thoroughly until the lumps disappear. Pour in the remaining water, stir.
  • Put on fire, bring to a boil, stirring carefully. It is necessary to interfere constantly. The flour is brewed very quickly. Cool down.
  • Beat butter, orange juice, salt, sugar, mustard with a blender. Beat for 2 minutes.
  • Add flour, beat again.
  • Lean mayonnaise
  • Another option for lean dressing. It turns out delicious, although, of course, it differs in taste from classic mayonnaise. Lemon can be used instead of orange.

Here, I will definitely try! I love mild and non-acid mayonnaise, but almost neutral, like sour cream. My favorite mayonnaise "Atamansky" has long been gone from sale. And homemade mayonnaises, due to the awful amount of oil, are extremely high in calories. I'll definitely do yours!

With bug fixes:
1. Too, too thick - diluted at the last whipping with skim milk, it turned out normal.
2. My mustard - well, thermonuclear. I'll put it in half the other time. And they are smaller.
3. I think that it will be delicious not only on water, but, for example, on brine. And you can add frozen dill - I love its smell. And the egg - for the color - my eggs are homemade, yellow.

P.S. There is no flour after all - it is brewed. I added salt and sugar to the flour mash, since they do not dissolve in oil.

I can't give the exact recipe, I cooked by intuition. I took a glass of apple juice, added starch 2 tbsp. spoons, then 2 tablespoons of flour, mixed everything and put on low heat. I brewed it, it turned out to be a very thick mass. I added 0.5 teaspoon of mustard (my own), a pinch of dried ginger and a pinch of dried garlic, a little salt. Poured oil no more than 2 tbsp. spoons and half a glass of homemade apple cider vinegar. Everything whipped up perfectly.
The only thing is that it turned out to be a little sweet, because my juice is very sweet, just sugary. Best made with sour apples.
