Bavarian Blackcurrant Cupcake (Schwarze Johannisbeeren Kuchen) Princess Pizza Maker

Ingredients

Dough
Eggs 2 pcs
Homemade sour cream 1 cup
Flour 1.5 cups
Sugar 1 cup
Baking powder 0.5 h l
Black currant 1 cup
Fill
Black currant 1 cup
Gelling Powder (Quittin) 0.5 sachet
Sugar Taste
Currant liqueur 4 tbsp

Cooking method

  • Cooking the dough. I beat the dough with a hand mixer. American cup from a set of measuring cups, 210 ml. Beat eggs with sugar until fluffy, add sour cream and continue beating for about 5 minutes. Reduce mixer speed and slowly add flour and baking powder. The dough will be very airy. Then add the currants, whisking on a slow speed. I have frozen currants. The dough will take on a pleasant pink tint.

Note

I tasted this cupcake on a trip to Garmisch, Germany. After walking around the neighborhood, the warm, aromatic kuchen came in handy. It took about 30 minutes to prepare. The taste is very original - something between soufflé and pudding. Delicate, and at the same time not mushy.
Sitting by the fireplace, we really enjoyed it.

The original recipe used homemade very heavy cream and fresh currants. I replaced the cream with homemade sour cream and used frozen currants, pouring boiling water over it.

Made cupcakes from this dough. Half a portion made a full Princess in silicone molds.

Babushka
Olga, Thank you!

Alexandra, Thank you! Very tasty when warm, almost hot! I'm not a sweet tooth, but this cupcake is special. It is not sweet, but rather sweet and sour and spicy due to the liqueur. I remembered Bavaria ... I also made a non-alcoholic punch (almost) ..
Cirre
And if the cupcake is without filling? Probably delicious too?

Loksa
Tatyana, and a cup is 250ml-gr or how much? Thank you
Babushka
Oksana, sorry, I'll add it now. American cup from a set of measuring cups, 210 ml.
Loksa
Tatyana, Thank you! I want to try one of these days, as I understand the authenticity of the recipe can be observed only with black currant? I have a bunch of lingonberries in syrup for a sweet tooth and I have a mountain of black currant, the only crop that brings a stable harvest in our country house, and is not in great demand (we freeze it)
Babushka
Oksana, thanks for your attention to the recipe.
Regarding the authenticity: we cooked and ate with black currants, and the next day I saw such a cake in the confectionery on Marienplatz, but with red currants. So it's hard to say. Personally, I think you can use any berry. Good luck!
Loksa
I baked it with red, it just got in my way in the fridge, delicious! Bavarian Blackcurrant Cupcake (Schwarze Johannisbeeren Kuchen) Princess Pizza Maker

BabushkaThanks for the cupcake recipe!
Today I had to attach some leftover currants, I remembered your recipe for the Princess. Since there was not enough for pouring currants, I baked with small muffins. Very gentle turned out!
