Ingredients

Melted butter 6 tbsp. l. (80 g.)
Brown sugar 150 g
Canned pineapple (rings) 570 BC
Cherries for cocktails 6 pcs.
For the test:
Wheat flour for general use 180 BC
Sugar 195 (reduced to 100)
Cooking oil (shortening), replaced by butter 80 g
Milk 180 ml
Baking powder 1 ½ tsp (5 years)
Egg 1 PC. (58 g.)
Vanilla sugar 1 package (10 g.)

Cooking method

  • Pineapple muffins
  • The muffins are prepared in a Nordic Ware mold according to the recipe attached to it.
  • Form name Mini Pineapple upside-down cake pan.
  • Volume 6 pcs. ¾ cup each (177 ml)
  • The form:

  • Preheat oven to 175 C.
  • Open a can of pineapple, drain the syrup.
  • Transfer the pineapples to a sieve to drain the remaining liquid.
  • Grease the sides of each mold well with butter.
  • Pour 1 tbsp into each cell. l. melted butter.
  • Divide 150 g brown sugar equally by 6 (25 g each, I added less, only 18 g) and sprinkle on butter in each mold.
  • Place one pineapple ring in each section.
  • Place one cherry in the center of the pineapple rings.
  • Set the form aside.

  • Dough preparation
  • The recipe attached to the form says: at low speed, mix the remaining ingredients, periodically cleaning the mixer bowl. Beat on medium speed for 3 minutes. Arrange the finished dough into the cells.
  • I prepared the dough as follows:
  • Beat softened butter with sugar and vanilla sugar until lightly fluffy.
  • Add the egg and beat again until smooth.
  • Sift flour into a separate container, add baking powder and salt, mix.
  • Combine flour and milk with the butter mixture in several steps, each time thoroughly mixing with a mixer.
  • That is, add a little flour to the oil mixture and pour in a little milk, stir so that everything is combined, add the flour with milk again and mix.
  • Pour the mixture on top of the pineapples (I got 101 g of dough in each cell).
  • Pineapple muffins
  • Oven at 175 C for 23-25 ​​minutes (it took me 30 minutes).
  • Here in the oven how they rise above the baking dish (by the end of baking, however, they have slightly decreased):

  • Remove from oven and immediately turn onto the wire rack (the recipe says on a heat-resistant plate):

I liked the recipe very much too. The only change is that I have reduced the amount of sugar. As the tasting showed, I did the right thing, it turned out moderately sweet, but not cloying, as I wanted.

The inverted cakes did not bake in silicone molds, but in the usual metal mold with a non-stick coating, the inverted apple cake turned out well.
If you really want to, you can try to bake it.

I will show the results of experimental baking with apples instead of pineapples.
I also replaced the dough, made a simple biscuit (eggs, sugar, flour), completely without oil.
After baking, the muffins popped out easily, despite the lack of oil in the dough.
Outwardly they resemble pineapple, with the exception of those where I added cinnamon to the sugar for caramelization (experiment, so to the fullest), it was she who gave a brown tint to these cupcakes.
The apple is baked and looks like jam. Or I have a variety of apples that immediately turns into puree. But it’s delicious, and nothing spreads, and it keeps the cap on the cupcake.
And the biscuit turned out pretty well. A little denser than if you bake it yourself (you had to knock after filling it with a mold), but overall good.

This muffin is just with an apple, in the second photo you can clearly see what kind of embossed barrel turned out on the biscuit dough:

Instance with cinnamon, so this color, it is not rosy, it just looks like this:

So you can bake apple muffins in this form. Although the apples are not as caramelized as pineapples, they are very pleasant and tasty. I like it.I just won't add cinnamon, it seemed superfluous to me. I'll leave the rest unchanged as a good baking option.
