Hamburg-style fried smelt (Gebratene Stinte)

Ingredients

smelt 6 pcs
flour 100 g
salt, pepper, dry herbs
vegetable oil 100 ml
parsley a few twigs
lemon

Cooking method

  • In Hamburg, residents have long enjoyed this delicious fish. This fish is found in the North Sea and the Elbe. Of course, in this case I mean Germany, and not all smelt habitats. In the Elbe, it is caught from February to March. And, as they say, at this time half of the inhabitants of Hamburg were fishing, and the other half ate this fish.
  • I looked at a lot of German recipes for making smelt - they are all similar to each other. Therefore, I present a universal recipe.
  • I'm not sure if my smelt is from the Elbe, I bought it in the suburbs. The fish is very good, amazing cucumber smell!
  • Hamburg-style fried smelt (Gebratene Stinte)
  • So, we cut off the heads from the smelt, remove the insides. Some even contained the most delicate caviar.
  • Sprinkle the fish with lemon juice, salt, pepper and sprinkle with dry trvs (caviar too).
  • Heat oil in a frying pan, roll each fish in flour on both sides.
  • Hamburg-style fried smelt (Gebratene Stinte)
  • Fry for 5 minutes on each side.
  • Serve with fried smelt with potatoes.
  • Bon Appetit!

Wow, how interesting - it turns out that the fish, which is considered our St. Petersburg business card, is also prepared in Hamburg style? And, just like we have from time immemorial? From the end of April to the middle of June, our city smells of smelt caught in the Gulf of Finland, in all forms: pickled, salted, but more often - fried. Smelt festivals are held in all districts, and anyone can feast on it and compare the art of cooking different culinary specialists. Far Eastern smelt is also imported, it is much larger in size, but loses in taste.

Larissa, I also always considered her ours. We have lived on Sakhalin for several years and we know this delicious fish very well, especially freshly caught. Now in the Moscow region you can buy only fresh frozen. You, Petersburgers, are lucky! You eat fresh. I can imagine what your smells are at festivals!

You are complaining here about fresh-frozen, but in general I have only tried dried. Falling down! What a delicious fish !!!!!
So I want to try fried

Nooo, we don't eat ice cream, what kind of smelt is that? But as soon as fishing begins, I try to buy the very first smelt, not even in a store or in the market, but from fishermen. And this is a real feast for the belly! You can eat it endlessly! Oh, how I wanted to! Hurry spring! Arka, rake in May for fresh!

I can't
pass by train
let's make an exchange: you are a smelt, I am something of ours (think of yourself)

Nah, we don't eat ice cream
Yes, Laris, who has tried fresh, knows that it cannot be compared with ice cream. But what to do, I want to.
Arka, and your sweets are very tasty (Kommunarka and Spartak) We always carry.

Alas...
they are already mixing palm palm instead of cocoa butter, butter is replaced with all sorts of trans fats, and the quality has dropped dramatically. Every year we have problems with currency in the country, so they save on raw materials, but cocoa beans do not grow here, more and more potatoes.
still holds the brand "Krasny Mozyryanin" and Bobruisk "Krasny Pishchevik", that is, quite peripheral factories. they still have candy, marshmallows, decent in composition and quality. there is also "Ivkon", which makes butter sweets, toffee, cows - the taste is like from childhood. This is how you will buy next time, look at the manufacturer

Oh, what a pity! We also love Bobruisk marshmallow, it is the most delicious and tender of all. Thanks for the information!
