Vienna Curd Cake (Wiener Kaesetorte)

Ingredients

FOR BASIS
Flour 220 g
Sugar 100 g
Oil 55 g (increased to 150 g)
Egg 1 PC
Soda + vinegar 0.25 tsp
FOR FILLING
Cottage cheese 300 g
Milk 300 ml (reduced to 120 ml)
Yolk 2 pcs
Sugar 90 g
Vanillin
Starch 15 g
Lemon juice 3 tsp
FOR MERENGA
Protein 2 pcs
Sugar 70 g
Salt pinch

Cooking method

  • 1. Prepare the dough. Beat eggs with sugar, vanilla, egg and butter. Add flour and soda. We knead the dough.
  • 2. Prepare the filling. Mix cottage cheese, yolks, sugar, vanillin, starch, lemon juice until smooth. Add milk, knead.

  • 3. Lay the detachable form with parchment, grease with vegetable oil. We spread the thin bottom and sides of the cake. Fill the filling. We bake for 30 minutes at a temperature of 1700FROM.
  • 4. Cooking the meringue. Beat the whites with salt until hard peaks, gradually add sugar, beat until the sugar dissolves. Spread the meringue with a pastry bag over the cake. We bake for about 10 more minutes at a temperature of 1600FROM.

Note

Here's a Viennese cheesecake. The curd filling is quite tender, not too dense due to the addition of milk (the curd used homemade 18% fat). Merengue quite tasty complements this curd composition, bringing a touch of freshness. I decorated with black currant berries, which came in handy!
