Pork knuckle stuffed with sauerkraut in German

Ingredients

Pork knuckle 1.2-2 kg
Marinade of your choice or salt, pepper 1.5 l
Sauerkraut 150 g
Lean minced pork 150 g
Baked onions (I have) 1 onion
Chicken eggs 2 pcs.
FOR SIDE DISH: Green peas 450 g ((I have 1 can)
Butter 150 g (I have 50 g)
Salt pepper
FOR SAUCE:
Low-fat cream 240 ml
Sour cream 100 ml
Shank broth or shank juice 200 ml
Salt, ground pepper
Flour 15 g
Sweet mustard 2 tbsp. l.
Greens bunch

Cooking method

  • - Wash the shank, scrape off well with a knife, soak a little. Remove bone. Season with salt and pepper. Let it marinate, then put it in boiling water with herbs and boil for a couple of minutes.
  • - Take out the shank, spread it out on a napkin, cut all the muscles well to flatten the shank meat for stuffing. Season the shank with salt and pepper.

  • - Make minced meat, salt, spices and sauerkraut. Do not grind cabbage! (I added baked onions to the minced meat)
  • - Put the minced meat in the middle of the shank and twist into a tight roll, fix with a napkin and cook in broth over low heat for 1.5 hours.

  • - Get the shank, you can brown it under the grill, cool and chill overnight if you want to serve cold.
  • Garnish
  • - Take the peas out of the jar, drain the liquid, add sl. butter, salt, pepper and beat in a fluffy puree.

  • - Make the sauce by boiling broth, cream and sour cream with the addition of spices, flour, salt and mustard. (I added a pinch of sugar to the sauce)

Note

I pre-marinated the knuckle for three days according to Ira's recipe Marinade for shank, wings, meat, brisket, etc. to add smoked flavor and appearance

Indeed, there is a slight hint of smoked meat in the finished shank, so I recommend the marinade to those who love smoked food, but do not have a smokehouse.

Since, according to Irina's recipe, the knuckle is put in a hot marinade, I did without preliminary boiling.

I cooked the knuckle almost steamed in Shteba, for 1 hour and 10 minutes on the "SOUP" program. Time with such a small weight of the shank can be set less. I had a shank weighing 1.2 kg.

I used cling film instead of a napkin. It is necessary to wrap it up very well in several layers, tying each layer into knots on the sides, and then wrap it in a bag, and fix it in turn, tightly fitting the knuckle. You can make a couple of punctures on the film.

I cooked broth from the bone. Part of it was used for sauce broth, and borscht was cooked from the rest.
