Ingredients

Cod fillet (halibut, flounder) skinless 6pcs x 150 g
Bulb onions 125 g
Dry red wine 200ml
Olive oil 4st. l.
Butter 30 g
Champignon 200 g
Bacon (I have brisket) 125 g
Frozen spinach 200 g
Salt pepper taste
Wheat flour 1 st. l.

Cooking method

  • Before cooking, you need to prepare food, namely:
  • Cut bacon and onion into small cubes. Mushrooms with plates. Defrost the spinach. Defrost fish and pat dry with towels.
  • Simmer the spinach in a saucepan with a little water and a pinch of salt.
  • Fry the bacon in a frying pan in heated olive oil (2 tablespoons), set aside.
  • In the same place, fry the onion until transparent, add the mushrooms, fry, stirring for 5-10 minutes, until the mushrooms are ready.
  • Return the bacon and flour to the pan, stir, add the wine and cook over high heat until the wine evaporates. Season to taste. I didn't salt, the brisket was salty enough, I had enough. Keep warm.
  • In another skillet, heat the remaining olive oil and butter until frothy. Fry the fish quickly (2-3 minutes per side).
  • Put spinach on a plate, fish on top, mushrooms and bacon around.

I slightly reduced the process of boiling red wine and replaced the original halibut, which is more expensive in our country than lamb, with cod. By the way, Ramsay also recommends using flounder fillets. It turned out indecently tasty!)
