Bread with black syrup

Ingredients

water 270 gram
wheat flour 1 grade 367 gram
peeled rye flour 90 grams
active wheat leaven 100% 65 grams
polysol or kvass wort concentrate 50gram
butter 30gram
dry yeast 1.8 grams
salt 12gram

Cooking method

  • Mix water, polysol, active starter culture. Add flour mixed with yeast. Knead the dough for 5 minutes at low speed, add butter (soft). Knead the dough for another five minutes, add salt. Continue kneading until the dough is smooth and wrapped around the hook. The total batch is approximately 20 minutes.
  • Round the dough and place in a greased fermentation dish. Fermentation for 120 minutes. Stretch-fold once in the middle of fermentation.
  • We form bread of any shape. Proofing in a basket seam up for an hour.
  • Preheat the oven with boiling water dishes and a stone. Turn the bread onto a shovel. make cuts and drop them into the oven on a stone. Baking the first 15 minutes with steam at 240 degrees. Then remove the steam, ventilate the oven. Reduce the temperature to 180 degrees. Bake until tender. My total baking time was 35 minutes.
  • We take out, cool on a wire rack, cut and enjoy.

"Polisol" is a 100% natural extract from sprouted grains of wheat, barley, oats and corn. Its biochemical composition is 9 vitamins, 9 minerals and 15 amino acids, including all 8 essential ones.
When germinating in grains, the process of accumulation of all nutrients necessary for the emergence of a new life takes place. It is a complex of vitamins, trace elements, amino acids and the energy of carbohydrates (glucose, maltose, fructose). When germinating, the content of vitamins in grains increases by 200-500%.
To date, natural 13 vitamins have been isolated and 9 of them (B1, B2, B5, B6, B12, C, E, PP, H) contain germinating cereal grains.
100 g of sprouted grains (and therefore in 100 g of Polysol extract) contain more vitamin C than 8 glasses of orange juice.
