Ingredients

Milk 250gr.
vanilla pod 1 PC.
vanilla extract 2gr.
powdered sugar 62gr.
yolks (3 large) 60gr.
gelatin 7gr.
cream (33% -35%) 275gr.

Cooking method

  • I found such a recipe on the Internet. It's easy to do, and most importantly it's very tasty !!!
  • In a small saucepan, heat the milk with the split vanilla pod and its seeds, as well as the vanilla extract.
  • Remove from heat, cover and set aside for 30 minutes.I just added vanilla sugar and a couple of drops of vanilla flavor to the finished cream.
  • Pour gelatin with cold water (I took about 30 grams of water) and let it swell.
  • Whisk the yolks with the powdered sugar until light.
  • Vanilla bavarian mousse
  • Bring the vanilla milk to a boil and pour into the yolks in a thin stream, whisking the mixture constantly.
  • Transfer everything back to the saucepan and return to low heat.I cooked in a water bath.
  • Cook, stirring constantly with a whisk, until the mixture reaches 85C.
  • Do not bring to a boil!

  • Remove from heat, add melted gelatin and stir.
  • Chill the cream in a cold water bath.
  • Transfer to an easy-to-mix bowl
  • and add the whipped cream. Mix gently.

Note

The mousse is wet, if packed under mastic, then you need to wrap it in a biscuit. Collect in a ring.
