Ingredients

Leaven:
mature sourdough with 100% moisture 40 g
flour 140 g
water 180 BC
Mochka:
Flaxseed 63 g
water 190 g
Dough:
wheat flour 698 BC
rye flour 74 g
leaven 306 BC
fried sunflower seeds 110 g
roasted sesame seeds 55 g
salt 20 g

Cooking method

  • Sourdough grain bread
  • Starter culture (moisture content 125%):
  • The proportions for the sourdough are conditional, mine is designed so that the sourdough is ripe during the day, in 10-11 hours and is ready when I return from work. If you know what to expect from your starter, mix it in your usual proportion.
  • Mochka:
  • Soak flaxseed in cold water 12 hours before kneading the dough. It should take all the water.
  • Dough:
  • 1. Combine all the ingredients in a mixer bowl and knead with a spatula until the dough comes together. Put on the hook and knead at second speed for 4 minutes. The dough should have moderately developed gluten, that is, it should be moderately elastic, with obvious gluten threads, but nothing more.
  • 2. Fermentation - 2.5 hours. Fold the dough once in the middle of fermentation. If the dough seems too weak, you can fold it twice after 50 minutes and 1 hour 40 minutes.
  • 3. Divide the dough in half, about 900 g each, form two batards or two round loaves. Immediately remove them in the refrigerator - the final proofing takes place at a temperature of 5 C for 12-18 hours. Cold proofing gives maximum aroma, but in case of a rush, you can do a regular proofing, a couple of hours at room temperature.
  • 4. Remove the bread from the refrigerator, turn it over onto a piece of parchment, cut it and place it in the oven preheated to 240 C (460 F). Steam for 45 minutes.

I added a little to the lobe chia seed, maybe there was not enough linen.
