White bread (any pastry) yesterday or completely stale 200-250 g.
Nuts (pistachios, almonds, hazelnuts) 200 BC
Sugar 150 g
Chicken eggs С0 3 pcs.
Butter 90 g
Cream - from 10% 250 ml
Milk - from 3.2% (can be completely replaced with cream) 250 ml
Dessert white wine (cream or fruit liqueur) 30-50 ml
Baking powder 3/4 tsp
Salt 1 pinch
Frozen cherries (apricot, peach - as an option) 1 pack. (300-400 g.)
Sundae (for serving) 1 scoop per serving

Cooking method

  • Manual of 10 steps.
  • Step 1.
  • Cut off the crust from the bread. We don't throw it away, what else! Let's start everything.
  • Step 2.
  • We crumble everything mercilessly (in a blender):
  • - nuts with about 1/3 sugar - as small as possible, until the butter starts to show through,

  • Pour the cherries, without defrosting, on the bottom of the form (I must say, any form will do, even a deep frying pan or portioned ramekin / refractory cups; the main thing is not to pour it to the eyeballs, otherwise the streusel will have nowhere to pour).
  • Fill the cherry dough and put in the oven, preheated to 140-150 gr. C (mode: top + bottom without convection).

This is a tartlet with pistachio paste, in which cherries are drowned - well, very tasty! So recently he brought another box of sweets, which we quickly sentenced.
Yesterday morning was completely bleak. Outside the window there is a thick fog and twilight, sleep cannot be driven away, and it sticks! In the fridge ... Nothing fancy in the fridge, but what pisses me off the most is none of the sweets! Well, what is this morning coffee without dessert ?! Is this a decent start to the day ?! And so a big psychological trauma - to get up at the alarm clock, and not after sweet snacks, so also naked drink coffee! Somehow I felt sad.
And then there is the forgotten and therefore stale bread on the table with reproach, an eyesore ... What, now give it to the birds (at best)?
And it is incomprehensible how the thought flickering in the backyards of consciousness about the "missed" pistachio tartlet and this hopeless biscuit formed the idea of ​​baking good old English pudding. At home, fortunately, everything from our plans was found: both pistachios and cherries frozen and even cream with milk somehow miraculously ended up in the refrigerator, which is a rarity in our house.
So this recipe was born.
It turned out delicious. Very delicate in consistency, such breathing pudding with pistachio flavor. Reminiscent of all sorts of baked butter creams. The dessert turned out to be good and full of contrasts: cherry gives sourness, cold ice cream, melting, becomes a viscous sauce, Streusel crunches pleasantly.

The pudding is especially good when warm, therefore, when its remainder has completely cooled down and thickened, do not be too lazy to heat it up in a microwave (microwave oven, oven), but do not overdo it, otherwise it will dry out.
