Ingredients

butter 30 g
lemon juice 10 ml
Orange juice 60 ml
orange peel 1 apesin
sugar 40 g
orange liqueur 10 ml
Brandy 30 ml

Cooking method

  • Delicious dessert from the Viennese pastry chef Karl Schumacher.
  • Basically I have everything according to the recipe except for orange liqueur and Brandy. I have berry liqueur, so I didn't buy an orange one. And instead of Brandi, she used cognac, since that is also suitable for flaming.
  • Bananas need to be cut lengthwise into 2 halves.
  • Prepare lemon, orange juice and zest of one orange.
  • Heat oil and lightly fry the bananas on both sides. Just not for long, otherwise they will become too soft and it will be difficult to shift them.
  • Flambierte Bananen
  • Gently transfer the bananas to a plate.
  • Add butter, sugar and stir.
  • Pour in orange and lemon juice and add zest.
  • Stir and boil until liquid caramel.
  • Put bananas in caramel and soak on both sides.

  • Pour cognac or Brandy liqueur over bananas (whiskey works too) and set fire.
