Carnival night cookies Fasnachtskuechlein

Ingredients

Wheat flour 400 g
Eggs 3 pcs.
Sugar 40 g
Cream 120 g
Cherry tincture 2 tbsp. l.
Butter 40 g
Fat for deep fat
Powdered sugar for sprinkling

Cooking method

  • Beat the eggs with sugar, gradually adding cream, melted but not hot butter and tincture. Combine with flour, knead a smooth, dense dough and, wrapping it with foil, leave in the refrigerator for an hour. After that, form a "sausage" with a diameter of ~ 3 cm from the dough, and, cutting off small circles from it, roll them out to a VERY thin state, as it is written in different sources - to the thickness of a razor or thin paper. For this purpose, it is even advised to put a cotton napkin on your leg and stretch the dough on your knee. Therefore, Fasnachtsküchlein is sometimes called differently (from the word "knee") Chneublätz, or Chilbiblätz.

  • Heat the oil for deep fat. The ideal temperature would be 170aboutC. At a lower temperature, the dough will absorb more fat, at a higher temperature, it will burn. Test in the absence of a thermometer: a slice of white bread at the right temperature acquires a beautiful golden color within a minute.
  • Fry the Fasnachtsküchlein one by one, put it on a paper towel to remove excess fat, sprinkle with powdered sugar and mentally join the bright and colorful Basel Carnival - Basler Fasnacht!

Note

These cookies are a must for the annual Basel Fasnacht.
Fastnacht - this is the name of the carnivals that take place before Lent in the southwestern region of Germany, in West Austrian Vorarlberg, in Liechtenstein, in the German part of Switzerland and in Alsace.
Basler Fasnacht Carnival is held annually in Basel (this year 23.02-25.02) - the largest festival of its kind in Switzerland.
Basel Fasnacht is a unique event that whimsically combines booth fun with the sinister images of the Dances of Death ...
This is a long-lived carnival. The first surviving written record of the festival dates back to Ash Wednesday in 1376, when a carnival tournament took place on the Münsterplatz Cathedral in Basel, during which there was a scuffle between the ducal knights and the townspeople. The latter were outraged by the harassment of the subjects of Duke Leopold III of Austria to the local ladies (this was obviously just an excuse: Leopold tried to return the Swiss cantons under the control of the Habsburgs and met resistance from many townspeople - supporters of the proclamation of Basel as an imperial city, as well as supporters of the bishop who ruled Greater Basel). The scuffle turned into a real bloody fight and went down in history under the name of "devilish fasnacht".
Many years passed before the Basel carnival acquired the forms familiar to the modern viewer, and in 1529 the celebration of the carnival was officially enshrined within three days after the first Sunday of Lent. In addition, 1529 includes the oldest surviving documentary evidence of the sale of carnival masks. In the early 1910s, the image of the Basel carnival was formed, which has survived almost unchanged to our days. Moreover, if in the XIX century. Carnival still bore the imprint of exclusivity and was limited mainly to the middle class, but now the Basel fasnacht has become a common holiday for all citizens. Now the carnival has lost its religious content and acquired the status of an independent holiday.
These three days, or more precisely, 72 hours, are considered by both residents and visitors of Basel as the most wonderful time of the year. They are filled to overflowing with colorful processions in fantastic costumes and masks, passing to the sound of flutes and drums and the cheerful roar of brass bands, performances by musicians and readers, exhibitions, various events for children and other fun fun. Each of the participants in the Fasnächtler - and there are about 20 thousand of them annually - dresses up in a costume with a large mask in such a way that the carnival vestment completely covers his face and body: it is considered good form so that the mummer cannot be recognized. During these three days, the mummers wander the streets of the Old Town, wander around cafes and restaurants, go to shops - in general, they turn Basel into one big holiday.
