I took ultra pasteurized milk, 3.5%. Boiled it, poured it into a jar, put it in water. 90 degrees on the SV 2 thermostat (approximately 92-93 degrees in real life), 8 hours. The product turned out to be excellent - taste, color, smell, even the correct foam was formed. No worries - he won't run away, won't burn, and even in a closed container.

  • Ryazhenka. Anticipating that our esteemed colleagues know many options for fermented baked milk, I will immediately inform you that I have chosen the simplest. For 400 g of baked milk I put 3 tablespoons of natural "Activia" 3.5%. 40.5 degrees, 5 hours.

  • Varenets. Again, everything is simple. 400 g of baked milk and 2 tablespoons of 15% sour cream. 40.5 degrees, 5 hours.

Yes, I wrote that, due to the circulation, SV 2 provides a more uniform heating, but in the case of baked milk in SV 1, the situation is somewhat different: there milk directly contacts the heated walls of the bowl - without intermediaries (water), as in my case - therefore, in this case, in the SV 1 bowl, milk is cooked like in a saucepan on the stove, but only with temperature support and with a more uniform heating - hence the time is only 3 hours. And if you heat milk in SV 1 in a can, I would bet on the same 8 hours.

The temperature is 90 for 8 hours, at this temperature there is a slight movement of milk, and it itself is mixed. Everything is with the lid closed, nothing evaporates, but a thick fermented baked milk comes out, I make from homemade milk.
