Ingredients

Dried and frozen mushrooms 5-6 pcs.
Chicken breast broth and boiled breast itself 3 l
Potatoes 3 pcs. ( 1 PC.)
Carrot 1 PC.
Bulb onions 1 PC.
Celery root or stem 100 g
Brown rice 0.5 tbsp.
Capers handful
Pickles 2 medium pieces
Salt, sugar
Allspice 5 pieces.
Bay leaf 1 PC.
Hmeli-suneli 0.5 tsp
Boiled chicken breast meat
Greens, sour cream, lemon for serving.
Vegetable oil and butter for sautéing vegetables 3 tbsp. l.

Cooking method

  • I love pickles on pickles and cook them often in a lean version or in chicken broth (you can take turkey or duck broth).
  • Today we have a dietary version, not very sour, rich in vegetables, a fragrant soup cooked on the basis of the Leningradsky Rassolnik recipe, but it seems to me more interesting.
  • The only thing I insist on is to cook the rice separately, and just put it on the plate before serving. We still cook the pickle for at least two days, and on the second day the cereals or vermicelli swell a lot, while the soup can turn into a mess.
  • Try boiling rice, noodles and other cereals separately. The only thing, this does not apply to soups with the addition of buckwheat - it behaves well!
  • - If you combine dried mushrooms with fresh or freshly frozen ones, then the dried mushrooms should be washed, covered with boiling water and left to stand for 15 minutes.
  • That's enough for my thinly sliced ​​and dried Sedona mushrooms. But if the mushrooms are very hard, then they need to be allowed to stand in water until softened and boil for 10-15 minutes, then strain the broth from the mushrooms and add to the soup. Cut the mushrooms into cubes and fry.
  • - Cook chicken broth from chicken breast or turkey shoulder with the addition of onions, carrots, dill, allspice and bay leaf. (Steba, 30 minutes, Soup program 25 minutes. (I removed the fillets from the breast to crinkle, the rest I used to prepare the broth.)
  • - Simultaneously cook brown rice. (Orsson pressure cooker ("Cooking" program 45 minutes, pressure 3, poured cold water, salted. Rice turned out a little al dente, as we like.)
