Ingredients

soft cottage cheese 250 g
wheat flour, I have 1c 250 g
butter 125 g
salt pinch
water / egg if necessary

Cooking method

  • Sift flour, add soft cottage cheese. I have homemade cottage cheese, not grainy, rather moist, so I did not add additional water / egg.
  • Curd puff pastry

  • Cut cold butter from the refrigerator into cubes about 1 x 1 x 1 cm, spread over the dough

  • I cooked a double portion, so I added the oil in 2 doses. Stir the mass with light movements of the hands

  • Now we knead and tamp the mass into a dense dough with pressing and compaction movements. We do not knead, but we ram! We form a lump and put it into a bag. We put in the refrigerator for 1 hour.

  • We take out the dough. I divided it into 2 parts, because I cooked a double portion, and it will be easier to roll out the dough this way.

  • Roll out the dough into a 40x20cm rectangle. The dough is tight and dense, press and flatten the dough with a rolling pin, dusting the surface

  • Tuck the edges to the middle

  • We put it in a bag and put it in the refrigerator for 30 minutes

  • We take it out, repeat the process again. Flatten the dough with a rolling pin. Roll out into a rectangle, tuck the edges, fold in half, fold along the length. Put in the refrigerator for 30 minutes

  • We take out, repeat the procedure. The dough rolls out a little better each time, the rectangle becomes longer.

  • The dough is ready. Can be stored in the refrigerator on the coldest shelf (or on the back wall), can be frozen. I left it in the refrigerator.
