Bread Trio

Ingredients

Option 1
baked milk 170 gram
premium wheat flour 350 grams
egg 1 piece
honey 20 grams
lard 15 grams
dry yeast 6.5 grams
salt 6 grams
carob 8 grams
matcha tea 5 grams
water for carob and tea 4 tsp
Option 2 (lean)
water 200 grams
premium wheat flour 350 grams
honey 20 grams
vegetable oil b / s 15 grams
salt 6 grams
dry yeast 6 grams
carob 8 grams
matcha tea 3 grams
water for carob and tea 3 tsp

Cooking method

  • Let's dilute tea and carob in different dishes.
  • Dough preparation in option 1 and option 2 does not differ. Just different ingredients.
  • Mix flour with yeast. Warm milk (water) slightly.
  • Dissolve honey in liquid. Add all the ingredients (for your option) except the lard (oil) and salt.
  • You can knead in a bread maker or food processor.
  • After five minutes from the start of kneading, add salt and butter to the dough. Continue mixing. The total time is 10-15 minutes.
  • Divide the dough into three equal pieces.
  • One piece is white. Stir in carob in the second, and tea in the third. Knead until the color is uniform. The task is not easy.
  • Bread Trio Put the dough to ripen. Fermentation for 1 hour.
  • Get the dough out. Knead and leave to rest for 20 minutes, covering the top with a film or towel so that the dough does not dry out.
  • Bread Trio Roll out 3 layers and fold one on top of the other.
  • Bread Trio Roll up into a tight roll. Pinch the edges and place with a seam at the bottom in a greased baking dish.
  • Proofing 50-60 minutes
  • Sprinkle the bread on top with water and bake. Oven 200 degrees. Bake for 10 minutes. Then lower the temperature to 180 degrees and bake until tender.
  • The total baking time was 30 minutes. If the top starts to burn, cover it with foil.
  • We take it out of the oven. Let stand in the form for a few minutes. We take out, cool, cut and enjoy a delicious and aromatic bread!

I baked two types of bread. This is due to the post. The original recipe uses ordinary milk or kefir (I have baked milk), butter (I have lard), sugar and honey (I didn't take sugar), cocoa (I have carob). I took less tea than in the source.
Carob is a "coffee" powder that is obtained from the dried pods of the subtropical carob tree. It is a plant of the legume family.
Carob is very rich in dietary fiber, which has a beneficial effect on the intestinal microflora. Recommended as a substitute for cocoa and chocolate for diabetics and overweight people. It contains a lot of protein and a rich set of vitamins. Carob does not contain caffeine, does not cause allergies, does not increase blood pressure.
My feelings. On the left is bread on water, and on the right is on milk. The dough behaved differently during fermentation and baking. What went up with milk was worse, but in the oven it "exploded" more. The crumb is more porous. Both breads are very, very soft, airy. I didn’t taste the tea. I put it in less than the prescription. Kerob gave a special note, not chocolate. how would cocoa give. A more delicate taste is obtained and for me it is a little nutty.
The recipe was taken on the flour forum from Natali06. Made by me with changes and additions. Based on it, I "created" a lean version.

Finally I baked it, I could not find tea for a long time, it was a day off.

It turned out delicious, baked in a bread maker for 35 minutes - baking mode, but for some reason I wanted to grease the crust with yolk and sugar and the awesome crust turned out right.
