Gingerbread with cocoa for painting

Ingredients

Dark honey 165g
Cane sugar 100g
Butter 125g
Egg 1pc and 4 yolks
Rye and wheat flour 1: 5 500-600g
Spices: cinnamon, cloves, ginger, cardamom, coriander 1/2 teaspoon
Natural cocoa 1 tablespoon
Soda 1 teaspoon

Cooking method

  • Put honey and sugar in a large thick-walled saucepan, put on fire and heat until the sugar is completely dissolved.
  • Add spices and butter, turn off heat and add baking soda.
  • Allow the dough to cool to room temperature, then add the egg, yolks, flour and cocoa.
  • Knead the dough, leave for a couple of hours (or overnight) in a cool place.
  • Roll out the dough into a layer with a thickness of 0.3-0.5 cm.
  • We cut out gingerbread cookies using molds or stencils.
  • Bake in a preheated oven at 180-200`10-12 minutes until tender.
  • Decorate with protein glaze or sugar crayons

I baked this recipe two times. For the first time, the gingerbread cookies "bubbled" during baking. In the photo, the first option. It is not very noticeable under the painting, but it did not add to the joy. The second time I tried the oven on a silicone mat. The gingerbread cookies turned out to be even. Lubricated with an egg, diluted in half with water. The most brilliant, like varnish, turned out to be the option when it was smeared immediately after baking in two layers. That is, immediately on a baking sheet I smeared everything in turn, and immediately with a second layer. The beauty! The gingerbread is lighter and more crunchy than my first recipe (soft gingerbread for painting). And less sweet, which I really liked. I liked the dough at work. Does not stick to hands and table. In general, I was satisfied. I look forward to your feedback. Well, and the questions to which I will try to answer.
