Pastry Sand strip

Ingredients

flour 330 gr.
sugar 130 gr.
butter 160 g
egg 1 PC.
vanilla sugar 1/4 tsp
slaked soda vinegar 1/2 tsp
Interlayer:
apple jam (you can do anything) 250 gr.

Cooking method

  • Dough preparation: Combine the egg, sugar and vanilla sugar in a bowl and beat with a mixer (I whisk with a blender whisk) until whitening.

  • Then add all the sifted flour and soda, lightly beat with a mixer until dry crumbs.

  • Add softened butter, stir a little, then put on the table and knead the dough (for 3-4 minutes), it should gather well into a ball, be soft, slightly sticking to your hands.
  • Pastry Sand stripWrap the dough in a plastic bag and refrigerate for 30 minutes. In the meantime, preheat the oven to 200 degrees. Then take out the dough. Spread parchment on the work surface, sprinkle it with a little flour and roll the dough on it into a rectangle the size of a standard gas baking sheet, up to 3-4 mm thick. Cut the dough into two equal parts and transfer to a baking sheet together with the parchment. Bake for 15-18 minutes until slightly golden brown.
  • Pastry Sand stripIn the meantime, slightly heat the apple jam (but since I didn't have it, I took the gooseberry jam) to make it easier to spread on the cake. Get ready-made shortbread cakes, put them on the table along with parchment. Smear the surface of one evenly with jam and leave to cool. Then cover the cake with jam with the second cake and press lightly.Pastry Sand stripCover the top cake evenly with any fondant and let it dry thoroughly.

I prepared a strip, it turned out to be awesome) for the first time I forgot to put slaked soda. Flew out of my head. And accordingly, it turned out rather dry, the dough did not rise and I overdried it. All the same, my oven even fried a strip at the far end for 15 minutes. BUT I cooked it a second time, I still need to correct mistakes. I added everything as it should and kept it in the oven less. I watched how it turned brown, pulled it out right away ... It turned out just softer than tender) even when transferring the top layer to the bottom layer, it broke slightly) But the glaze hid everything thanks FOR THE SUPER RECIPE)))) the strip is just like the taste of childhood)
