Eggplant in oil marinade (for the winter)

Ingredients

ripe eggplants
vegetable oil, refined. 500 ml
sugar 1.2 grain stack
salt 3 tbsp. l. with a small slide
vinegar 9% 1 grain. stack.

Cooking method

  • 1) Combine vegetable oil, sugar, salt and vinegar in the proportions indicated in the recipe in a 5 - 6 liter saucepan, and put the pan on high heat until the marinade boils.
  • A large saucepan is needed due to the fact that during boiling, the marinade begins to foam profusely and grow in size.
  • 2) Cut the small eggplants approximately in half, and the large ones into quarters and lower them in batches almost to the top of the saucepan in the boiling marinade. Just making sure that the marinade does not run away from the pan.
  • 3) Cook the eggplant until the fork begins to freely enter the eggplant pulp. Aim for an average of about 15 minutes per game.
  • 4) We take them out of the marinade, without removing the pan from the heat, and put them in sterilized jars.
  • If there are not enough eggplants to fill the jar, put the next batch of eggplants in the boiling marinade. We also cook until soft and put in a jar to the previous batch.
  • 5) After filling the jars to the neck, fill the jars to the brim with boiling marinade. We twist them. Turn over and wrap until it cools completely.
  • The proportions of the marinade should be increased if you have a large batch of eggplants prepared for preservation.
  • However, I want to draw your attention to the fact that you should not pour more than 1.5 servings of the marinade into the pan at a time. Otherwise, if you put a lot of eggplant in it, the foaming marinade can give you a lot of problems!
  • If, after preparing today's batch, I still have marinade in the pan; I do not pour it out, but leave it in the pan. And the next day I cook the next batch of eggplants in it. If necessary, adding another portion of the marinade to it.

This recipe was given to me by an employee many years ago. And I never tire of thanking her for him!
We love the eggplants cooked in this way exactly as they are: soft and sour - salty - sweet, as they are obtained with this method of cooking!
They are especially good, oddly enough, hot, even, rather, scalding hot. What my family eats them in huge quantities.
In the same way, I harvest bell peppers for the winter.
