Mandela for chicken broth

Ingredients

Chicken egg 4 things.
Wheat flour 340-350 g
salt 2 tsp
Refined vegetable oil for deep fat

Cooking method

  • Jewish mandels are not sweet cookies like in German cuisine, but salty balls of deep-fried egg dough. Traditionally served with clear chicken broth.
  • So, take the eggs, break them into a bowl, add salt and beat lightly with a fork.
  • Add flour and knead a very steep dough. I knead by hand, because a bread maker cannot do that. It is not necessary to stir for a long time, 5 -7 minutes until smooth.
  • Leave at room temperature under the film for 10-15 minutes to swell.
  • That's how much dough is made from four eggs.

  • Cut off a small piece and form a rope as thick as a finger. Tip: do not try to immediately roll the flagellum of the desired thickness. It is convenient to make several plump workpieces, and then roll them out in turn.
  • Cut the finished flagella into pieces

  • Always keep the dough under a film, as it dries very quickly.
  • We heat the vegetable oil. I use my smallest high-sided skillet. The oil layer must be at least 2 cm.
  • Throw pieces of dough into boiling oil and fry over high heat for 3 - 4 minutes until golden brown. Turn the balls over for an even roast.
  • Attention! It is not necessary to throw a lot of dough, because it greatly increases in volume.
  • I just threw it:

  • They have already grown up and surfaced:

  • We take out the mandela from the butter with a slotted spoon and put it in a bowl lined with a paper towel to remove excess oil, and put the next portion in a frying pan.
  • Such funny things turn out here.

  • Bon Appetit!

Note

This is my first experience with writing a recipe. I use this site all the time, I learned how to bake bread and bake delicious meat. Now I am ready to share my family recipe.
It's really very simple, fast and delicious.
The main thing is to take refined oil. If there is sediment in the oil, it will foam and shoot, which will not do any good to the stove and kitchen floor.

Franky
... but if you roll out about a million circles with a sewing thimble and cut out about a million circles with a touch of fanaticism, then it will turn out as my grandmother did :-)
This is really delicious! Thanks for the recipe, or rather a reminder of it :-)
SvetaI
Wow, I didn't even know about the thimble! We always have flagella at home
Chuchundrus
I love things unknown to me SvetaIthanks for sharing the family recipe
For now, bookmark, but as soon as I have the broth from the village chicken, I will definitely try the recipe
SvetaI
Thank you, Natalia, try it, you won't regret it!
Franky
By the way, this is a very problematic dish in the sense that only half of the "things" often survive before bathing in the broth :-)
SvetaI
That's why I give such a large portion. Dine for four - a serving of 2 eggs is enough. And also a broom helps with small marauders, and a rolling pin for large ones. The main thing is not to relax

Cool recipe !!! I love these things, I will definitely try !! Thank you Svetochka for an interesting recipe !!!!
SvetaI
lettohka ttt, Thank you. I would be glad if you like it!

Oh, I agree! Especially if the family is big! In a dish of the same kind, I dream of having enough of a spetzle. So it became already dreary. And then my turn does not reach forever. Etda. Thanks a lot to the author!
SvetaI
Ira, thanks for the tip. I will protect these mandels very much until lunchtime and it always seems that there will be enough for tomorrow. But then vigilance falls and a couple of things left out of politeness survive until tomorrow

Franky, right to the point said! I grew up in Birobidzhan, and the "mandushki" did not leave the table ... Oh, blessed childhood and adolescence! And the highest aerobatics is precisely the perfectly round mandela. And, if you bake a whole basin ... Ah-ah-ah-ah! Birthday hearts! And in the evening the whole family sits by the TV set and cracks "cunts" like seeds ... Incredible deliciousness!

cunts

cool name. In our country they were either called "coins" (in a thimble version), or precisely "things".

You can't run away from yourself! I am the main eater of convenience foods in my kitchen.
An interesting recipe, and as she said Chuchundrus, "a little thing unknown to me". To bookmarks!
Tumanchik
Sveta, and what are they to your taste? What do they look like? And how are they the next day?

Aha! My nanny called them "little things" ... She had them very tiny. No bigger than a thumbnail.
SvetaI
Franky, Mikhaskahow great it is that this recipe is known in different parts of the world! Thimble, thumbnail-sized and perfectly round - cool! In my case, they open like a flower, probably because of the rolling of the flagella. I'll have to try to stick on the little ones.

Irish, you know, it is difficult to describe the taste in words. Well, fried dough, what can you say? If you've ever fried dumplings, then you have a rough idea. Mandela is quite dense, crispy, not croutons, but almost. Perceptibly salty. You can put less salt. If they live until the next day, they don't get any worse. Try to do a little first, they won't be lost, don't be afraid
MariV
And I didn't know anything about such a dish! And now I will know, I am very glad of that!
SvetaI
Olga, Thank you! I am a bastard with this site - there are so many breads that you can bake every day and never repeat it. And what can we say about cooking in general! I would be glad if you also try such a dish.
MariV
I will gladly do it on occasion! Thank you!
Kras-Vlas
What interesting things, I will definitely do it! Thank you, Sveta!
Marina22
And I will definitely do, thank you, Sveta
filirina
Oh, those little mandels of yours! Terrible thing! I kneaded 1 egg for a sample, fried it and just ate it without leaving the stove during frying! And where to put the figure then? Very tasty and simple. I love these recipes. Thank you!
Aunt Besya
And I won't bookmark !!!! I won't, and that's it !! ah-ah-ah! poor hfigura

Kras-Vlas, Marina22, filirina, Aunt Besyathank you girls! With hfigura, yes, of course. Especially if you fry and click like seeds in front of the TV. And if to an empty broth - maybe nothing, eh?

of course nothing. Even useful. The main thing is to take a smaller plate.
I, too - if I do - then from flagella, but I make them thinner, about half a centimeter in diameter. and, if not laziness, then poke each piece with my finger so that they are a little wider. And it is also delicious if the dough is not too salted, but then sprinkle with salt while still hot ...

Aha! Someone is funny, but someone went to the stove to fry the second portion and now sits at the computer and devours ...

No, you have to say a rich figure! My husband says that beauty should be HEALTHY! And I, apparently, literally understand everything!

in Germany they are sold ready-made in the store. I often half-sleep.

Backerbsen? We, too, were delighted at first and bought a couple of times too ... Nuuuuuu, it will do for a (very) rainy day, but compared to the "real" ones, these are their very poor relatives. But maybe I haven't had any luck so far. I don't remember the brand already.

with cheese, paprika
You know, NataliARH, for all my love for cheese and spices, I never put anything in mandels except salt, somehow it seems to me wrong to pour something there. Probably because this is a dish from childhood. But you can of course try.
At Backerbsen, judging by the recipe, there is still milk and butter in the dough, and in mandels, in my opinion, the trick is in brevity. There is some Jewish truth in this
Mikhaska
SvetaI, a hundred times right! Mandushki, as one of the brightest representatives of folk (and not restaurant), Jewish cuisine, are so good that they convey the richness of taste precisely through the simplicity of ingredients and preparation! And, everything else is just a desire to show off ...
SvetaI
Irina,
Lerele
You can also pour a spoonful of vodka into the dough, we did it at home.
Lummen
fold the mandela with a pea, pour it over with honey and get chak-chak
SvetaI
Yes Yes,Nastena, just put less salt.
Baba Valya
Svetlana, thank you. I made a full portion (the eggs are large - it took more flour) and it was lazy to knead with my hands, the combine managed with knives in a minute. Yummy !!! While I was frying, I ate a bunch, at dinner four more people a bunch, the rest in the photo:Mandela for chicken broth py sy I will fry more than once
ninza
Svetochka, this is just a song, not a recipe! I bookmark it, and the figure .......
Mikhaska
Baba Valya, Valyusha! How cute they are! Neat!
SvetaI
Valentinewhat nice things came out! Judging by the photo, I see that I liked it. I am very glad, thanks for trying!
If I had a mechanism to knead such a dough, I would make them more often ...
ninza, Thank you. Try it, it really tastes good
