butter 200gr.
sugar 250gr.
coconut milk 1 can (400ml)
flour 450gr.
salt 1 / 4h l.
coconut flakes 50-100gr.
Filling
canned pineapple pieces 1 can (375ml.)
sugar 2-3 st. l.
starch 2st. l
lemon juice 1 PC
light rum 2-3 st. l.

Cooking method

  • I would like to present you another cookie from the series for adults. Cookies based on the famous Pina Colada cocktail.
  • Dough:
  • Beat soft butter with sugar until white.
  • Add coconut milk, salt and beat thoroughly.
  • For a stronger coconut flavor, you can add coconut flakes (optional), but you can do without them.
  • Lead flour in three passes, mix thoroughly.
  • Transfer the dough to a bag and place in the freezer for at least 30 minutes.
  • Filling:
  • Put the pineapple in a tall blender glass, add sugar, rum, lemon juice and punch with a hand blender. Sugar, as well as juice, regulated to your taste, it all depends on pineapples, they are delicious and aromatic, and sometimes tasteless like paper.
  • Add starch and mix everything thoroughly.
  • We take out the dough from the freezer, divide it into two parts.
  • We put one half between two bags and roll out to the size of the mold.
  • We shift it to the form and tamp it.

  • Roll out the second part of the dough and place it on top of the filling. Pin the edges.
  • I didn't fit a little into the shape and I did it in two more small shapes.
  • Bake for 40 minutes at 180C

  • Remove the cookies from the mold and sprinkle with rum on top, if desired, 1-2 tbsp. l.
  • Let it cool for 30 minutes and cut into pieces.
