biga 200 g
premium wheat flour 500 g
whey + water 300 g
salt 10 g
Saf-moment yeast 3 g
vegetable oil 2 tbsp
sesame seeds, flax seeds optional

Cooking method

  • The recipe for the simplest bread for every day is taken as a basis. Not a competitive option at all. I bake this every other day, mainly in the form of a loaf. This time I used ripe biga and sesame seeds, and since it was little I remembered about forgotten flax seeds. I quickly kneaded the dough without even thinking about the photo and competition. Everything is as usual: short kneading, autolysis, kneading for 15 minutes until elasticity and finally salt and oil. The dough rose before our eyes. Soft, lush, elastic. It was a pleasure to mold the ball. Therefore, the shape remained round. And since at the same time I was baking pies with cottage cheese, there was an egg left for lubrication, I attached it to bread. Baking on a hot baking sheet at 215 degrees. the first 10 minutes with steam, then at 200 degrees. another 40 minutes. The bread turned out to be glorious and to the delight of the soul.

eugeshkaBiga is a dough that can stand in the refrigerator for a long time, up to 2 weeks. Mixed with the same amount of flour and water and yeast. Fermentation of the dough at room temperature for 1-1.5 hours until the increase is at least two. After shaping, the dough is suitable for about 50 minutes until fully proofed.
