Ingredients

liquid raspberry yeast 100g
whole grain wheat flour 100g
wheat flour 1 grade 300-320g
water 80g
whey (curdled milk) 100g
honey 2 tbsp. l.
cranberry 40g
walnuts 30g
sunflower seeds 20g
salt 7g
vegetable oil 10g

Cooking method

  • To cook fruit-based liquid yeast, I have raspberry. 8-12 hours before baking, prepare a pre-enzyme by combining liquid yeast with whole grain flour and 1 tbsp. l. honey. For me, it increased 3 times in 8 hours:

  • Knead the dough from the pre-enzyme, 1st grade flour, honey, water and whey, knead for 10 minutes. Add salt and oil (I have grape seeds) and knead for another 5 minutes. Add cranberries, nuts and seeds and knead for another 2 minutes. The dough turns out to be soft and slightly sticky, but it comes off well from the walls. Leave to rise in a warm place under the plastic for about 2 hours with 1 wrap in the middle. Stretch the dough, fold it, round it, let it rest for 15 minutes. Form a bar and place it in the proving basket for 1-1.5 hours. Turn gently onto baking paper, make cuts.

  • Bake in a preheated oven with steam for 240 * C for 15 minutes, then without steam for 190 * C for another 25-30 minutes. The section is interesting and colorful. Fluffy bread with cranberry-nut taste and aroma. Exceptionally suitable for cottage cheese, curd cheese, jam, without adding extra pounds.

Hurrah! I managed! The yeast lay in the h-ke for 2-3 weeks, I thought it was gone. But the pre-enzyme doubled in one day. There were no seeds and nuts, I put 1 spoonful of honey, instead of cranberries 50g lingonberries, I added 15g of bran, regular flour 330g. Now I ate a piece with a cutlet. Delicious! If it works out later I will attach a photo.
