Ingredients

active lemon sourdough 100% moisture (with lemon yeast) 300 grams
water 110 gram
sugar 100g
candied lemon 80 gram
soft margarine without animal fats 50 grams
vanillin taste
salt 0.5 tsp
dry yeast 2 grams
streusel crumb
soft margarine without animal fats 20 grams
sugar 20 grams
wheat flour 1 or in / grade 50 grams

Cooking method

  • How I made lemon sourdough (at least I call it that), described here Brewed bread with lemon yeast.
  • Now I feed her every day in equal parts flour and water. I put it in the refrigerator. I take out the active leaven from it in the morning.
  • I took 300 grams on rolls.
  • Lean rolls with lemon sourdough From sourdough, water and flour with yeast and sugar, they began to knead. After everything was well mixed, I added the margarine. Then I put in salt and added candied fruit at the end. Total dough kneading 15 minutes. The dough is soft, does not stick.
  • Round the dough and ferment. Fermentation for 2 hours with one stir in the middle.
