Wheat bread with green buckwheat flour

Ingredients

Starter starter 200 g
Wheat flour 500 g
Green buckwheat flour 50 g
Instant yeast 1.8 g
Salt 8 g
Water 300 ml

Cooking method

  • We put all the ingredients in the bucket of the bread machine, fill it with water on top, set the kneading program with proofing - I have half an hour of kneading and an hour of proofing.
  • You may need to add some water during the mixing process.
  • Then we take out the dough, gently stretch it on the board, fold it in an envelope, again leave the bread machine in the bucket for an hour.
  • Then we take it out, knock it into a ball, put it in a mold - I have an ordinary old frying pan, put it in the oven with a tray of hot water for an hour, then make cuts and bake at T200 for half an hour, then reduce T to 180 and bake until tender.
  • After baking, grease the top with olive or any other vegetable oil, cover it on top - first with paper, then with a towel, and leave to ripen until it cools completely.
  • It is better to eat any bread every other day.

The taste of the bread is neutral, like that of porridge made from green buckwheat - the cereal is not fried. But the crust - not very crunchy, but rubbery - I added this flour to the dough for fried pies - I really liked it, I will constantly use it. Buckwheat flour also contains no gluten, which is a big plus!

Girls, I often add green buckwheat (done, really) to the bread dough. Just like that, for a variety of taste. Sometimes I also replace 50g of wheat flour in the basic recipe with buckwheat (but ordinary, not from green buckwheat). I love the aroma of buckwheat bread very much !!! Especially delicious - when you fry a piece in a toaster until crisp, and with borscht. Yesterday's lunch! (and the borscht was with duck ......)
