French nut buns

Ingredients

Dough:
Warm water 150 g
Wheat flour, premium 100 g
Fresh yeast 12 g
Sugar 2h l.
Dough:
Opara all
Wheat flour, premium 400 g
Hazelnuts (chop) 100 g
Cream 33% 160 g
Sugar 100 g
Salt 1 \ 2h. l.
Vanillin 1 \ 2h. l.
Milk for lubrication
Sugar for sprinkling

Cooking method

  • For dough, grind yeast with sugar, pour into water, add flour. beat until smooth. Close and leave for 20 minutes.
  • For the dough, add all the ingredients to the dough. Knead a soft, sticky dough in a food processor: 2 minutes at low speed, 7 minutes at high speed. I kneaded in Thermomix. Spikelet mode.
  • Fold the dough in an envelope, put it in a greased container, cover and leave for 30 minutes at 30C.
  • Then fold the dough again in an envelope, return to the container and leave for 60 minutes at 30C.
  • Then divide the dough into the required number of pieces. I have 16 pieces of 60-65 g.
  • Form a bun from each piece, place on a baking sheet covered with paper. Leave for 30 minutes at 30C.
  • Brush with milk, sprinkle with sugar before baking.
  • Put in a cold oven, turn on 200C and bake until tender. The exact time depends on your oven.
